Slow Cooker Bourbon Chicken served over rice is a great dinner recipe that doesn’t take a lot of effort. The homemade sauce really is the real winner here.

Slow Cooker Bourbon Chicken
This recipe uses chicken thighs that you’ll shred after they have cooked. You can serve this on a bed of rice or couscous.
You can choose to put this in the Crock Pot in the morning and let it sit all day on low, or you can cook it quicker by putting the setting on high. If you’d like to get this going say, before you head to work for the day, you can mix up the sauce the night before and keep it in the fridge until you’re ready for it.
Bourbon Sauce
To answer your first question, yes this does have actual Bourbon in it. It is a small amount though, just 1/4 a cup. There are a total of 12 ingredients in this sauce including vinegar, brown sugar, honey, soy sauce and more. You will whisk it all together to pour it over the chicken. The flavor when it all comes together is really delicious.

Slow Cooker Bourbon Chicken
Ingredients
Ingredients:
- 3 lbs. boneless skinless chicken thighs
- 3 tbsp. cornstarch
- 1 large scallion sliced thinly
Sauce Ingredients:
- 1/2 tsp. grated ginger root
- 4 garlic cloves minced
- 1/2 tsp. red pepper flakes
- 1/2 cup apple juice
- 1 1/2 tbsp. pure honey
- 1/4 cup light brown sugar packed
- 1/4 cup tomato ketchup
- 3 tbsp. apple cider vinegar
- 1/4 cup water
- 1/4 cup bourbon
- 1/4 cup low-sodium soy sauce
- salt and pepper
Instructions
- In a small bowl, whisk together all sauce ingredients until combined.
- Lay chicken thighs in the bottom of a slow cooker and pour sauce evenly over top.
- Place the lid on the slow cooker and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Transfer cooked chicken thighs to a cutting board and cut into 1-inch pieces.
- In a small bowl, whisk together 3 tbsp. water with cornstarch until smooth.
- Place slow cooker on HIGH heat and whisk in the cornstarch mixture.
- Place the lid back on the slow cooker and cook for about 10 minutes, stirring occasionally, until sauce thickens.
- Add chicken and scallions to the thickened sauce and stir to coat.
- Serve hot over rice or noodles.
