This Smothered Southwest Chicken Bake is a delicious and easy dinner idea. It is simple enough to make on a busy summer night but it is tasty enough to serve to guests. Even the fussiest eaters are going to love this easy chicken casserole.

Smothered Southwest Chicken Bake
I am always trying to find simple meals that work even on the busiest night. Southwest baked chicken is done in under an hour and is healthy. I think that might be the best part. In less time than it takes to get takeout, this healthy and inexpensive dinner can be on the table.
Ingredients
- Boneless, skinless chicken breast- Boneless skinless thighs will work too.
- Black beans– Be sure the beans are rinsed and drained
- Corn – Drain and rinse the corn.
- Diced green chiles- These chilis give a slight amount of heat without making it spicy.
- Red bell pepper- Remove the seeds and dice the peppers.
- Cilantro- You want to use fresh cilantro and dice it.
- Colby jack cheese- Shredded cheddar cheese will work too.
- Garlic- You can mince the garlic yourself or buy store bought minced garlic.
- Seasonings – You will want to season the baked chicken with cumin, crushed red pepper, salt and pepper.
How to Make Southwest Baked Chicken
Mix together the seasonings and add it to a sealable bag with the chicken.
In a small bowl, combine the corn, black beans, green chiles, red bell pepper and cilantro and mix together well.
Set it aside.
Line a baking pan with foil and then place the chicken on the pan and bake for 10 minutes.
Remove the chicken and place it in a large casserole dish.
Add the corn mixture to the casserole dish and spread over the chicken.
Add the cheese and bake for 30-40 minutes at 375 degrees.
Can I Use Chicken Thighs?
You can also use boneless skinless chicken thighs in this recipe. I like to use whichever one is on sale at the time.

Ingredients
Ingredients to make Easy Southwest Baked Chicken:
- 4-5 boneless skinless chicken breast
- 1 cup canned black beans rinsed and drained
- 1 cup corn rinsed and drained
- 1 can diced green chilies
- 1 red bell pepper diced
- 1/4 cup chopped cilantro
- 1 cup Colby jack cheese shredded
- 1/2 tsp minced garlic
- 1/4 tsp cumin
- 1/4 tsp crushed red pepper
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Mix the garlic powder, cumin, salt and pepper and set aside.
- Place the chicken in a sealable bag, sprinkle the chicken with the seasoning mixture.
- In a small bowl combine the corn, black beans, green chiles, red bell pepper, and chopped cilantro and mix well.
- Set to the side.
- Line a baking pan with parchment paper.
- Place the chicken on the pan and bake for 10 minutes.
- Remove the chicken and then place it In a large casserole dish, lay the chicken breast flat in the baking dish.
- Spread the corn mixture evenly over it.
- Add cheese on top of the mixture.
- Bake uncovered at 375˚F for 30-40 minutes.
