We are sharing these adorable Monster Sandwich Cookies that we created for Halloween! These are so fun and easy to make…the Kids will love them! We found this fun idea from the Dixie Crystal Kids in the Kitchen website found HERE where they have a ton of easy and adorable treat ideas for Kids!
Monster Sandwich Cookies
- Candy eyes
- Mini marshmallows
- 1 3/4 cups flour
- 3/4 cup cocoa
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, room temperature
- 1 cup Dixie Crystals Extra Fine Granulated Sugar
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla
For Buttercream Icing:
- 1 cup (2 sticks) unsalted butter, softened
- 6 to 8 cups Dixie Crystals Confectioner’s Powdered Sugar
- 1/2 cup milk
- 2 teaspoons vanilla extract
- orange, purple, and green gel food coloring
Directions
Preheat oven to 350° F. Line two baking sheets with parchment paper.
In bowl, whisk flour, cocoa, baking soda and salt. Set aside.
Cream butter and sugar together until light and creamy, about 3 minutes. Add egg, milk, and vanilla. Once combined, slowly add dry ingredients until fully mixed. Take a heaping tablespoon and drop batter onto the prepared baking sheets, 2 inches apart.
Bake for 10 to 12 minutes. The cookies will be set, but still soft. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Frosting
Mix the softened butter in a large bowl. Add the powdered sugar and mix in between each cup…
Place 1/2 cup of frosting in a small bowl and set aside. Separate the rest of the frosting into 3 bowls….
Add your food coloring into each bowl of frosting and mix until well blended. We squeezed in 2 drops for each color…
Place large baggies in a cup and fill the bags with the frosting…
Snip off the ends and pipe the frosting on the flat end of the cookie.
Top with another cookie. Glue on the candy eyes using your reserved frosting.
Cut your mini marshmallows at an angle using kitchen scissors like this…
Press on your marshmallow halves on the front side of the frosting to look like teeth…
