These Boozy lemon bars are delicious. And don’t worry, the boozy part is totally optional! So everyone can enjoy these flaky lemon bars with or without alcohol. They are great either way!

Boozy Lemon Bars
Crust Ingredients
- 1 and ¾ C flour
- ¼ C cornstarch
- ½ C granulated sugar
- ¼ tsp salt
- 1 C unsalted sweet cream butter, softened
- 2 tsp vanilla vodka (Optional)
Lemon Filling Ingredients
- 1 and ½ C sugar
- 1/4 C flour
- 4 eggs
- 1/2 C fresh lemon juice
- 2-4 tbsp Citrus Vodka (Optional)
Meringue Ingredients
- 4 egg whites
- 1/4 tsp cream of tartar
- 1/2 C sugar
- 1/2 tsp vanilla
- 1 disposable piping bag with a star tip
Directions
- Preheat oven to 350°F.
- Line a 9×13 baking pan with parchment paper
- In a large mixing bowl, whisk together the flour, cornstarch, sugar, vanilla vodka and salt.
- Cube the butter into smaller pieces and add to the flour mixture. Using your hands cut the butter into the mixture until it’s crumbly and starts to come together.
- Scoop the mixture into the prepared baking pan and press it down into one even layer.
- Bake at 350°F for 20-25 minutes
Lemon Filling Directions
- In a large mixing bowl, whisk together the granulated sugar and flour.
- Add in the eggs and lemon juice and citrus vodka and mix until fully combined.
- Pour the lemon filling over the crust and return to the oven.
- Bake at 350°F for 18-22 minutes or until the lemon filling is set.
- Remove from the oven and transfer to a wire rack to cool for 1 hour.
Meringue Directions
- Preheat oven to 350 degrees
- Using a standing mixer, whip the egg whites until they are glossy and smooth, then add the cream of tartar to help the egg whites hold their form.
- Slowly add the sugar to the egg whites and then add vanilla.
- Scoop into the piping bag
- Pipe the meringue on top of the lemon bars and place into the oven that is preheated to 350 degrees for about 10 minutes
- Let cool for a few minutes before cutting and enjoying your Boozy Lemon Bars!
