How gorgeous is this salad? It’s one of those things you make and immediately take a picture of and send to all your friends. When I make something this beautiful I am just so proud of myself. It looks like something from a restaurant advertisement.

Ingredients:

  • Brussel sprouts
  • An apple
  • Dried cranberries
  • Pomegranate seeds
  • Almonds
  • Feta cheese
  • Olive oil 
  • Lemon juice
  • Apple Cider Vinegar
  • Mustard 
  • Honey
  • Garlic powder

How To Cut Brussel Sprouts for Salad

The key to cutting your brussel sprouts easily is to have a very sharp knife. First, cut off the ends and toss them. Then carefully slice the sprouts as thinly as possible. You don’t want to have big chunks in your salad.

How To Make A Brussel Sprout Salad

Start by chopping your fruits and veggies and tossing them together with pomegranate seeds, cheese, cranberries and nuts. That’s literally all you have to do for this yummy salad.

Then, for the dressing, add all of your ingredients to a bowl and whisk them together until it’s mixed well.

Pour it over your salad mixture and you are all set.

What kind of mustard do I use for the dressing?

Any mustard of your choice! I have used yellow and Dijon so far and both taste amazing.

Can I make this in advance?

Yes, this keeps overnight very well if you do not put the dressing on it. Just leave the mixture in a baggie or other air tight container.

Do I have to use almonds?

No, you can use any type of nut you’d like. I personally think walnuts would go great. Or you could totally skip nuts altogether.

Ingredients
  

Ingredients

  • 1 lb fresh brussel sprouts- rinsed and dried
  • 1 large granny smith apple
  • ¼ cup dried cranberries
  • ½ cup pomegranate seeds
  • ¼ sliced almonds
  • 1 ½ ounces crumbled feta cheese

Dressing Ingredients

  • ½ cup olive oil
  • 1 Tablespoon fresh lemon juice
  • 2 Tablespoons apple cider vinegar
  • 2 teaspoons mustard
  • 2 Tablespoons honey
  • ½ teaspoon garlic powder

Instructions
 

Directions for salad:

  • To prepare the brussel sprouts, use a sharp knife to cut off the ends and discard. Then slice the sprouts as thinly as possible.
  • Chop or slice the granny smith apple.
  • Combine all salad ingredients in a large bowl and toss to combine.

Directions for salad dressing:

  • Combine all ingredients in a small bowl and whisk together until well combined.

Notes

Almonds can be substituted for any nuts.
The mustard can be yellow or Dijon, whichever you prefer.
