Octopus Stuffed Peppers

We love creating stuffed pepper ideas and this week we are sharing how to make these fun Octopus Stuffed Peppers! These are so easy to make and we are also sharing a recipe that the kids will love!

Octopus stuffed peppers

Octopus Stuffed Peppers

(Makes 4)

5 Yellow Bell Peppers
1 Package of Microwaveable Brown Rice
1 lb. Ground Turkey
1 8 oz. Can Roasted Garlic Tomato Sauce
1/4 tsp. Ground Pepper
Shredded Mozzarella Cheese

How To Make Stuffed Peppers

Heat oven to 375°F. Cut thin slice from stem end of each bell pepper to remove top. Remove seeds and membranes; rinse peppers. Reserve tops and one peppers. If necessary, cut thin slice from bottom of peppers so they stand up straight. Cut the reserved pepper in half. Then cut that half into slices. This will be the arms.

Cook rice in microwave as directed on package. Meanwhile, in 12-inch skillet, cook turkey over medium-high heat 5 to 7 minutes, stirring occasionally, until turkey is thoroughly cooked; drain. Stir in 1/2 cup of the tomato sauce, the ground pepper and cooked rice. Stir in half of cheese

Stuff peppers with turkey mixture. Pour remaining tomato sauce inside the peppers and place in a ungreased 11×7-inch (2-quart) glass baking dish. Stand peppers upright in dish. Also line up the pepper slices in the dish to cook. Cover tightly with foil. Bake 45 minutes. Uncover; sprinkle remaining cheese on top and bake about 15 minutes longer or until peppers are tender.

Place on the tops after baking. Place the cooked pepper slices around the stuffed peppers to look like Octopus arms. We decorated using cheese and olives for the eyes and a piece from a red pepper for the mouth.
