This Steak Egg and Cheese Bagel recipe is both tasty and filling. It’s the perfect handheld breakfast sandwich that can be enjoyed any day of the week. With the delicious sauce and juicy tender steak, you will want it for every meal!

The Best Steak Bagel Sandwich

When looking at a good sandwich, I find it needs 3 things; cheese, a good amount of protein, and a tasty sauce. This steak egg and cheese bagel hits all of those. I like to prepare them for breakfast, but we have made them as breakfast for dinner as well. The sauce is creamy and tangy, which cuts through the richness of the ribeye, melty cheese, and the runny egg. This will quickly become one of your family’s favorite breakfast item when you serve it alongside hash browns for a hearty breakfast.

This recipe makes enough for 4 sandwiches. It can easily be cut in half or doubled, depending on how many sandwiches you would like. It may feel like a complicated recipe because there are a lot of steps involved. I promise it’s super easy and will be ready in 35 minutes. It’s way better than a McDonald’s Steak Egg and Cheese Bagel.

What You’ll Need

Just a few simple ingredients are needed to make the best steak and egg & cheese sandwiches ever.

Sauce

  • Mayonnaise
  • Mustard: I use original yellow mustard.
  • Lemon Juice: I prefer freshly squeezed but you can also use bottled.
  • Paprika
  • Dried Dill: Fresh dill can also be used if you like!

Steak and Onions

  • Shaved Ribeye Steak
  • Montreal Steak Seasoning: You can adjust the amount of this seasoning to your personal preference.
  • Salt and Pepper: This will also be to taste.
  • Vegetable Oil
  • Yellow Onion: Sliced thin to be cooked with the steak.

Fried Eggs

  • Eggs
  • Salt and Black Pepper: Add a sprinkle of each and adjust to your liking.
  • Butter: Unsalted or salted can be used.

Assembly

  • Bagels: I use plain bagels for this recipe.

How to Make A Steak and Egg Sandwich

Once all of the components are cooked, all you have to do is assemble the steak egg, and cheese bagels. I promise all of the effort put into this recipe is worth it.

  • Make the Steak Egg and Cheese Bagel Sauce. Whisk mayonnaise, mustard, lemon juice, paprika, and dill in a small bowl to combine. Set it aside.
  • Season the Steak. Add the shaved steak, Montreal steak seasoning, salt, and pepper to a medium bowl. Toss to coat.
  • Cook the Steak. Heat a large skillet over medium-high heat and add vegetable oil. Add the steak and onions to the skillet. Cook for 5-7 minutes or until the steak and browned and the onions are soft and caramelized. Remove both from the skillet and set them aside, make sure you get all of the browned bits from the bottom of the pan..
  • Cook the Eggs. Lower the heat to medium and melt a tbsp of butter. Crack the eggs into the skillet and season with salt and pepper, and cook until the whites are fully set and the yolks are still runny.
  • Assemble the Breakfast Bagel Sandwiches. Toast the bagels and spread sauce on the bottom half with a rubber spatula. Layer steak and grilled onions, top with American cheese slices, and finish with the fried eggs and the top half of the bagel. Repeat for the 3 remaining sandwiches and serve!

Tips and Variations for a great Breakfast Sandwich

  • Cheese: Instead of melty American cheese, try cheddar, swiss, provolone, or mozzarella.
  • Toppings: Adding extra toppings can take this sandwich to another level. I like to add lettuce, tomato, pickles, avocado, hot sauce, or whatever you choose to these steak and egg sandwiches.
  • Eggs: If you don’t like a runny yolk, follow the same steps except break the yolk and cook until firm. Or you can choose to whish the eggs before cooking to have a fluffy folded egg.
  • Bagels: You can use any variety of bagels you prefer. I love everything, onion, or cheese bagels for this recipe.

How to Store Leftovers

If you have any leftover sauce or steak, they can be stored in the refrigerator. Place into separate air-tight containers. They will stay fresh for up to 2 days.

Sauce

Steak and Onions

  • 28 ounces ribeye steak shaved
  • 1 tablespoon Montreal steak seasoning adjust to taste
  • salt to taste
  • pepper to taste
  • 1 tablespoon vegetable oil
  • 1/2 yellow onion thinly sliced

Fried Eggs

  • 4 large eggs
  • salt to taste
  • pepper to taste
  • 1 tablespoon butter

Assembly

  • 4 plain bagels sliced, lightly toasted
  • 8 slices American cheese

Instructions

  • In a small bowl, combine the mayonnaise, mustard, lemon juice, paprika, and dried dill. Mix well to create a flavorful sauce. Set aside.
  • In a medium-sized bowl, season the shaved ribeye steak with Montreal steak seasoning, salt and pepper. Toss to coat the steak evenly.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the seasoned steak and sliced onions. Cook, stirring occasionally, until the steak is browned and cooked through, and the onions are soft and caramelized. This should take about 5-7 minutes. Remove the steak and onions from the skillet and set aside.
  • In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and fry them until the whites are set and the yolks are still runny. Remove from heat and set aside.
  • To assemble the sandwich, spread a generous amount of the sauce onto the bottom half of each toasted bagel. Layer the cooked steak and onions onto the sauce. Place 2 slices of American cheese on top of the steak and onions, allowing the residual heat to melt the cheese slightly. Add a fried egg on top of the cheese. Finally, place the top of the bagel on the stack to complete the sandwich.
  • Repeat the process for the remaining 3 bagels. Serve immediately and Enjoy!
