Your kids are going to love these unicorn whoopie pies! We had a unicorn party last summer when my daughter turned five and these would have been the perfect treat to go with it. Even if you’re not a unicorn fan, these funfetti sprinkle cookies are delicious.

Unicorn Whoopie Pies
Makes 12 whoopie pies
Ingredients
- 1 box of french vanilla cake mix
- 1/2 C unsalted sweet cream butter, softened
- 1 large egg
- 1/2 C funfetti sprinkles
- 1 cookie sheet lined with parchment paper
- 1 small ice cream scoop
Frosting Ingredients:
- 1/2 C unsalted sweet cream butter, softened
- 1 1/2 C powder sugar
- 1 tsp vanilla extract
- 4 tbsp heavy whipping cream
- blue, pink and purple food gel
- 3 disposable piping bags
Cookie Directions
- Preheat your oven to 350 degrees
- In a standing mixer, combine all ingredients except the sprinkles and mix until combined and smooth
- Using a rubber spatula, mix in the sprinkles
- Using the ice cream scoop, scoop out some dough and roll it into a ball
- Place dough ball onto the cookie sheet and lightly push down into a thick disk
- Repeat steps with remaining dough
- Bake in the oven for 8-10 minutes or until lightly golden brown
- Once baked, set aside and allow to completely cool
Frosting Directions:
- Using the standing mixer, combine all ingredient except the food gel.
- Mix on medium speed until creamy and stiff with peaks
- Split the frosting into 3 bowls and add a few drops of the food coloring into a bowl each.
- Mix the frosting until the color is completely mixed.
- Scoop the frosting into a piping bag and cut the tips off
- Pair up the cookies
- Using the bottom of one cookie pipe a small dollop of frosting
- Sandwich the cookies and enjoy!
