Unicorn Whoopie Pies

Your kids are going to love these unicorn whoopie pies! We had a unicorn party last summer when my daughter turned five and these would have been the perfect treat to go with it. Even if you’re not a unicorn fan, these funfetti sprinkle cookies are delicious.

Unicorn Whoopie Pies

Makes 12 whoopie pies

Ingredients

  • 1 box of french vanilla cake mix
  • 1/2 C unsalted sweet cream butter, softened
  • 1 large egg
  • 1/2 C funfetti sprinkles
  • 1 cookie sheet lined with parchment paper
  • 1 small ice cream scoop

Frosting Ingredients:

  • 1/2 C unsalted sweet cream butter, softened
  • 1 1/2 C powder sugar
  • 1 tsp vanilla extract
  • 4 tbsp heavy whipping cream
  • blue, pink and purple food gel
  • 3 disposable piping bags

Unicorn Whoopie Pies

Cookie Directions

  1. Preheat your oven to 350 degrees
  2. In a standing mixer, combine all ingredients except the sprinkles and mix until combined and smooth
  3. Using a rubber spatula, mix in the sprinkles
  4. Using the ice cream scoop, scoop out some dough and roll it into a ball
  5. Place dough ball onto the cookie sheet and lightly push down into a thick disk
  6. Repeat steps with remaining dough
  7. Bake in the oven for 8-10 minutes or until lightly golden brown
  8. Once baked, set aside and allow to completely cool

Frosting Directions:

  1. Using the standing mixer, combine all ingredient except the food gel.
  2. Mix on medium speed until creamy and stiff with peaks
  3. Split the frosting into 3 bowls and add a few drops of the food coloring into a bowl each.
  4. Mix the frosting until the color is completely mixed.
  5. Scoop the frosting into a piping bag and cut the tips off
  6. Pair up the cookies
  7. Using the bottom of one cookie pipe a small dollop of frosting 
  8. Sandwich the cookies and enjoy!
