French Dip Sliders

Roast beef, caramelized onions, and Swiss cheese are layered on Hawaiian rolls to make these easy French Dip Sliders. Served with au jus for dipping, they’re great for parties and game day.

These French dip sliders are inspired by my French dip sandwich recipe, with a few swaps to make them even easier. Instead of cooking a beef roast, we’re starting with deli roast beef, which makes the sliders quick enough to whip up anytime. But they’re still piled high with caramelized onions and gooey cheese. These are among our all-time favorite slider recipes, with others like Philly cheesesteak sliders and Big Mac sliders.

Why These French Dip Sliders Are A Family Favorite

  • Easy to make. These French dip sliders are ready in just 45 minutes and most of that is inactive bake time. Plus, they’re made with deli roast beef, which makes them easy to whip up anytime. No need to have leftover roast!
  • Classic French dip flavors. There is no shortage of flavor in these sliders. They may be easier to make than the classic sandwich, but they’re just as yummy, with caramelized onions, gooey cheese, and onion soup mix sprinkled on top.
  • Great for parties. I love to serve these sliders at various gatherings. They’re great for game day! I think they feel a bit fancier than many other sliders, which makes them ideal for the holidays too.

Recipe Ingredients

The ingredients list for these sliders is very similar to the ingredients in the traditional sandwich. Scroll down to the recipe card below for the exact measurements.

  • Butter – For caramelizing the onions.
  • Onions – Thinly sliced so they easily caramelize.
  • Spices – Fresh thyme, salt, and pepper.
  • Hawaiian rolls – King’s Hawaiian rolls are my go-to for sliders. Don’t break them apart!
  • Roast beef – I kept things simple by using deli-sliced roast beef. Feel free to ask them to slice it thinly for you!
  • Swiss cheese – Swiss is my go-to for these sliders, but any cheese works. Cheddar, Monterey Jack, mozzarella, Colby jack, or pepperjack are all good options.
  • Dijon mustard – Combined with butter to brush over the rolls for added flavor.
  • Dried onion soup mix – Adds savory onion-y flavor to the sliders.
  • Aus jus gravy mix – For dipping the sliders.

How To Make French Dip Sliders

These sliders are so easy to make! Just be sure not to rush caramelizing the onions – the flavor is worth it. The printable instructions can be found in the recipe card below.

  • Prep. Preheat the oven to 350F. Line a baking sheet with parchment paper.
  • Caramelize the onions. Melt the butter of medium heat. Add the sliced onions and cook for about 15 minutes, stirring often, until soft and caramelized. Remove from heat. Season with thyme, salt, and pepper.
  • Assemble. Slice the buns in half horizontally. Place the bottom buns on the baking sheet. Add the roast beef in an even layer. Top with the Swiss cheese and caramelized onions. Add the top of the buns.
  • Brush with butter. Microwave the butter and Dijon mustard for 10 seconds. Stir to combine. Brush the mixture over the sliders. Sprinkle the dried onion soup mix on top.
  • Bake. Tent the pan with foil. Bake for 15-20 minutes, until the cheese is melted. Remove the foil and bake for an additional 5 minutes to toast the buns.

Slider Variations

There are lots of ways to customize these French dip sliders. Here are a few of my favorites!

  • Use different buns. Regular yeast dinner rolls or even brioche slider rolls work great as alternatives to Hawaiian rolls.
  • Try a different meat. While it won’t be a classic French dip anymore, other meats like pastrami, thinly sliced brisket, tri-tip, and corned beef taste great In this recipe.
  • Add some greens. Feel free to add some arugula or baby spinach for a bit of freshness.
  • Try it with sauerkraut. A bit of sauerkraut on top of the meat is another twist I love. It adds a bit of a kick and lots of flavor!

Serving Suggestions

A side of au jus gravy for dipping is a must when it comes to these French dip sliders! I also love to add some crispy French fries as a side if I’m serving these as a meal. Some other great options are coleslaw, oven roasted potatoes or mac and cheese. They’re great for game day and parties, as part of a spread of other appetizers like buffalo chicken dip and dill pickle Chex mix.

How To Store & Reheat Leftovers

  • Fridge. Refrigerate leftover French dip sliders in a sealed container for up to 3 days.
  • Reheat. Reheat in the microwave in 1 minute increments just until heated through. If reheating several, the oven works too. Reheat on 350F, covered with foil, until heated through.

  • Preheat oven to 350 F and line a baking sheet with parchment paper.
  • In a large skillet over medium heat, melt the butter and add the sliced onions. Cook, stirring often, for about 15 minutes until the onions are soft and caramelized. Remove from the heat and then season with thyme, salt, and pepper.
  • Use a bread knife to slice the buns in half horizontally across then place the bottom buns onto the prepared baking sheet.
  • Add the roast beef slices in an even layer, top with a layer of Swiss cheese, add the caramelized onions, and then place the top of the buns back on.
  • In a small bowl, place the butter slices and dijon mustard. Microwave for 10 seconds, just until melted. Stir to combine.
  • Brush the butter mixture evenly on top of the buns and then sprinkle on the dried onion soup mix.
  • Tent with foil and bake for 15-20 minutes until the cheese is melted. Remove the foil and then bake for an additional 5 minutes if needed to toast the buns.
