Biria sliders are not your typical sliders. They are packed with flavor and amazing texture in every bite. From the balanced spices to the tender beef and fluffy rolls—it’s a recipe the whole family can get behind! If you are looking for something new and creative to add to your dinner rotation, I highly recommend you give these sliders a shot.

I adore birria tacos. They’ve become one of my favorite foods ever! This recipe captures the essence of a traditional birria mexican dish but adds a fun spin with Hawaiian rolls. It’s unique but still super delicious. They even make a great starter for a party!

What You’ll Need

This is the list of ingredients you’ll find in these birria sliders. It’s straightforward; beef, birria spices, some aromatics, and then items to compose the sliders!

  • Stew beef: I prefer beef chuck roast or any cut that has a higher fat content that will melt and tenderize the meat as it cooks in the crockpot.
  • Onions and garlic: These aromatics infuse more flavor into the beef as it cooks. The onions add a subtle sweetness that complements the birria seasoning packet to create a balanced flavor profile.
  • Birria packet: Most birria seasoning mixes include a variety of dried chiles that add smokiness, depth, and a little spice. They also have cumin, oregano, cinnamon, coriander, and sometimes allspice. They come together to create that classic and recognizable flavor.
  • Beef broth: This provides moisture for the beef and mixes with the birria sauce spices to create a jus that can be used for dipping, if desired.
  • Hawaiian rolls: These are sweet, soft, and the perfect slider buns. They hold up well and toast perfectly!
  • Colby Jack cheese: I like Colby Jack for the sliders, but you may use cheddar, provolone, or any variety of sliced cheese you want. Not a cheese fan? Leave it out!
  • Butter: This is to melt and brush onto the tops of the slider rolls before they go in the oven. It adds a crispy exterior and golden brown color.
  • Garlic salt: I sprinkled a little garlic salt on the rolls for flavor and presentation! Feel free to skip it and garnish with fresh cilantro or parsley instead!
  • Toppings: Some of my favorite ideas are red onion, jalapenos, and lime juice! Use whatever you like.

How to Make Birria Sliders

Below are all the steps you’ll need to prepare your slow cooker birria meat and the sliders once the beef is cooked. Most of the time is spent waiting for the beef to be ready!

  • Add the ingredients to the pot. Combine the stew beef, onion, garlic, birria packet, and broth in the slow cooker. Lightly stir the ingredients.
  • Cook. Cover the crockpot and cook the beef on low for 4-6 hours or until it’s fall-apart tender.
  • Shred. Remove the meat from the pot and shred it with two forks.
  • Prep the oven and baking dish. Preheat your oven to 350 degrees F. Then, grab a 9×13 baking dish and grease it with nonstick cooking spray.
  • Add half the rolls and cheese. Lay the bottom halves of the Hawaiian rolls in the dish. Top them with the Colby Jack cheese slices.
  • Top with beef and toppings. Add shredded beef and your desired toppings. I went with cilantro, red onion, and jalapenos.
  • Add tops, butter, and garlic salt. Place the tops of the rolls over the beef. Brush them with melted butter and sprinkle with garlic salt.
  • Bake and serve. Put the pan in the oven and bake for 12-15 minutes. Enjoy the sliders hot with lime wedges and braising liquid from the slow cooker for dipping!

Tips for Success

  • Cook the beef low and slow. If you want to cook the stew beef on high, you may. It will take around 3-4 hours. However, it won’t be nearly as soft and tender. I recommend that you allow plenty of time for it to cook low and slow to get the most juicy and flavorful result.
  • Try it with pork. Use a pork shoulder instead for a twist! It will take roughly the same amount of time to cook. If you are unsure about whether or not it’s ready, check to see if it shreds easily or use a thermometer. It must be cooked to a minimum internal temperature of 145 degrees F.
  • Make it spicy. This recipe is also amazing with some heat! Try adding sriracha or ancho chili peppers to the slow cooker to infuse spice into the beef. I also like to add some red pepper flakes if I want the birria sliders to be extra spicy!

Proper Storage

Store leftovers in an airtight container for up to 3-4 days in the refrigerator. I only recommend freezing the birria beef separately and preparing the sliders on demand. They will not thaw and reheat well from frozen.

To reheat refrigerated leftovers, place them covered in a 350-degree oven for 10-12 minutes or until they are warmed through. You can use the microwave, but the rolls may get a little soggy.

Birria Sliders

These Slow Cooker Birria Sliders are so flavorful and easy!! Perfectly seasoned, tender shredded beef, melty cheese and toppings get piled on soft hawaiian rolls and dipped into that delicious broth! These are always a favorite!

Ingredients
  

  • 2 pounds stew beef
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 ounce envelope birria seasoning packet
  • 1 cup beef stock
  • 12 count hawaiian rolls
  • 6 slices colby jack cheese
  • 2 tablespoons butter
  • 1/2 teaspoon garlic salt
  • 1 tablespoon parsley or cilantro chopped
  • Cilantro red onion, lime, jalapeno for topping

Instructions

  • To your slow cooker add the stew beef, onion, garlic, birria seasoning packet and beef stock.
  • Slow cook on low for 4-6 hours until the stew beef is tender. Shred the beef.
  • Preheat your oven to 350 degrees.
  • Slice the rolls in half place in a 9×13 baking dish.
  • Add the cheese slices to the bottom half of the rolls.
  • Top the cheese with the shredded beef and any toppings you like, cilantro, red onion or jalapenos. Place the top half of the rolls on.
  • In a small microwave safe bowl in 30 second intervals melt the butter with the garlic salt and parsley.
  • Brush the butter on the top of the rolls and bake for 12-15 minutes until the cheese is melted.
  • Serve with the cooking liquid from the slow cooker for dipping and limes for squeezing.
