If you love the flavor of Watergate Salad, you are going to love these Watergate Cookies. These are chewy cake mix pudding cookies that have all the flavors of the traditional Watergate Salad. These cookies are incredibly easy to make and the flavor is fantastic.

If you have ever tried Watergate Salad, which isn’t a salad but more of a fluff dessert than you know the delicious flavor of pistachio, pecans, and coconut. These easy to make cookies are made with cake mix and bring in all of the flavors of the Watergate Salad but in a chewy soft cookie.

Ingredients

  • Yellow cake mix- Yellow cake mix is the base of these cookies. You can swap it for a white cake mix if you need to.
  • Pistachio pudding- Just like the Watergate Salad, the flavor of these cookies is pistachio.
  • Unsweetened shredded coconut- You want to use unsweetened shredded coconut rather than sweetened
  • Pecans- Chop the pecans into small pieces so that it is small pieces in the cookies
  • Eggs- Room temperature eggs are best.
  • Canola oil- Vegetable oil can be used instead of canola oil if that is what you have on hand

How to Make Watergate Cookies

Mix the ingredients together in a bowl until they are well combined.

Scoop the cookies onto a cookie sheet that is lined with parchment paper.

Bake the cookies in a 350 degree oven until they are lightly browned.

Can I Use White Cake Mix Instead?

While I use a yellow cake mix, which is traditional, you can use a white cake instead. The bulk of the flavor comes from the pistachio pudding and the coconuts so changing from a yellow cake mix to a white cake mix shouldn’t change the flavors.

Can This Cookie Dough Be Frozen Raw?

If you want to make this cookie dough and have it on hand, you can make the dough and freeze it. You can freeze the dough as a whole batch and store it in a freezer bag or you can scoop the cookies and freeze them. Freeze them on a plate before adding them to the freezer bag so that the cookie dough balls do not stick together.

Ingredients
  

  • 1 box yellow cake mix
  • 1 - 4 serving size pistachio pudding
  • ½ C unsweetened shredded coconut
  • ½ C chopped pecans
  • 2 large eggs
  • ½ C canola oil

Instructions

  • Preheat oven to 350 degrees and line a cookie sheet with parchment paper
  • Using a mixing bowl, beat together all ingredients until combined
  • Scoop some cookie dough onto the parchment paper and bake in the oven for 10-12 minutes or until the cookies are lightly browned

    Made this for St. Patrick’s day dessert and it was simple, and tasted amazing! I’m off the mind set that you make substitutions where you have to and I did. I used a Coconut cake mix a a bd added green food coloring to make it more holiday like! Amazing flavor and I love the texture of the cookies which I did a cookie bars in an 8×8 pan!
