I tend to make a lot of breakfast casseroles on the weekend, when everyone is home and hungry. This biscuits & gravy casserole is one of the most requested. I make it at least once a month! It’s also one of my go-to’s for brunch with friends and holidays.

The Ingredients

This savory biscuits and gravy casserole is made with just a handful of ingredients. You can find the exact measurements in the recipe card below.

  • Refrigerated biscuit dough – Use large biscuits, such as Grands.
  • Bulk sausage – We use a mild breakfast sausage. Feel free to use your favorite.
  • Shredded cheddar cheese – You could use any shredded cheese you like, but we go for cheddar.
  • Eggs – Eggs add some protein to this casserole, making it extra filling.
  • Milk
  • Salt and pepper
  • Peppered gravy mix – The full package should make 2 cups of gravy. You’ll need whatever the package calls for as well, though most just require water.

How to Make Biscuits & Gravy Casserole

  • Prep. Preheat the oven to 350F. Grease the baking dish.
  • Cook the sausage. Cook the sausage over medium heat until browned. Drain off fat.
  • Assemble. Cut the biscuits into 4 pieces and spread over the bottom of the pan. Add the cooked sausage over the biscuit dough then sprinkle the cheese over the sausage. Whisk together the eggs and milk, season with salt and pepper, and pour over the casserole.
  • Add the gravy. Make the gravy according to the package instructions then pour over the casserole.
  • Bake. Bake for 40-45 minutes, until the biscuits have puffed up and it’s golden brown on top.

Tips & Variations

Here are some tips for making the best biscuits & gravy casserole, as well as some ways to customize it.

  • Use your favorite sausage. I like to use a mild breakfast sausage as it adds some flavor but not too much spice for the picky eaters. However, you could also use maple sausage for a sweeter flavor or even spicy breakfast sausage.
  • Make extra gravy. If you’re a gravy fan, feel free to make extra gravy to serve on the side.
  • Add bacon. Bacon is a great replacement for sausage or you can even add it in addition to the sausage for an extra meaty casserole.
  • Don’t overbrown. If you notice the top of the biscuits and gravy casserole getting a little too brown (especially if you make it in advance), tent some foil over the top to stop it from burning.
  • Use your favorite cheese. I love cheddar in this recipe but you could use a cheese blend or whatever your favorite shredded cheese is.

Can I Make This In Advance?

Yes! You can easily make this biscuits & gravy casserole the night before. Just put the whole casserole together as directed, but instead of baking it, cover it tightly with plastic wrap and refrigerate overnight.

In the morning, remove the casserole from the refrigerator and heat the oven. Bake the casserole as directed, but you’ll need to add about 20 minutes to the baking time. Check the casserole often towards the end of the baking time to be sure it doesn’t burn.

How To Store & Reheat Leftovers

  • Fridge. Keep the leftover casserole in the refrigerator covered with plastic. It will keep for up to three days.
  • Freeze. You can also freeze this biscuits and gravy casserole. Individual servings can be wrapped tightly in plastic and frozen or you can bake it right in a freezer-safe container, let it cool, and freeze. Thaw in the fridge and reheat in the oven.
  • Reheat. Reheat individual servings in the microwave in 30-second cooking intervals until warm. You could also reheat the whole casserole in the oven at 350F until heated through, just cover the top with foil to prevent burning.

  • 8 count package refrigerated Grands biscuit dough
  • 1 pound bulk sausage
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • ½ cup milk
  • Salt and pepper to taste
  • 1 peppered gravy mix (2 3/4 ounce, makes 2 cups)

Instructions

  • Preheat oven to 350F. Grease a 13×9 baking dish with non-stick cooking spray.
  • In a large skillet, cook the sausage over medium heat until completely browned. Drain off the fat and set the sausage aside.
  • Cut each biscuit into 4 pieces and spread over the bottom of the prepared pan in an even layer.
  • Add the cooked sausage over the biscuit dough, then sprinkle the cheese over the sausage.
  • In a large bowl, whisk together the eggs and milk; add salt and pepper to taste, then pour the mixture all over the casserole.
  • Make the gravy according to the package instructions. Pour the prepared gravy over the whole casserole.
  • Bake the casserole for 40-45 minutes until puffed up and golden brown on top.

    My whole family LOVES this meal, even the picky kids. There’s a job for each one of us, if we break down the steps. We like the fun and laughing together in the kitchen.
