Cheesecake Brownie Recipe

Brownies are a great dessert to grab if you want a quick treat or to enjoy as an after-dinner dessert. The best part about these cherry brownies is the fact that they combine two types of desserts into one! That means double the flavor, double the texture, and double the deliciousness! Brownies are one of my go-to desserts, so I will always recommend more than one recipe. So, be sure to give these Cheesecake Brownies or these Chocolate Mousse Brownies a try too!

Ingredients

Brownies:

  • Butter– Use unsalted butter to control the amount of salt in the recipe.
  • Sugar– This sugar is always used in the best desserts.
  • Vanilla– Use pure vanilla for the best flavoring.
  • Eggs– Use these at room temperature.
  • Flour– Use all-purpose flour for the best results.
  • Cocoa Powder– You will need this to be unsweetened.
  • Baking Powder– This will allow the recipe to rise in the oven.
  • Salt– This will bring out the flavors in the recipe, but make sure to only use it if you use unsalted butter.
  • Cream Cheese– Use softened or at room temperature.

How to Make Cherry Cheesecake Brownies

To start, use parchment paper to line a 9×13-inch baking pan and use Pam to lightly grease it as well.

Next, you will need to set the oven to 350 degrees.

Brownies:

First, add the butter and sugar into a large mixing bowl and combine until smooth.

Secondly, whisk in the vanilla until combined.

Thirdly, one at a time, add in the eggs, mixing after each addition until combined.

Next, use a whisk to mix in the flour, cocoa powder, baking powder, and salt until combined, then fold using a spatula until smooth.

Cherry Cheesecake Filling: 

First, add the cream cheese, sugar, egg, and vanilla into a medium mixing bowl and combine using a hand mixer until smooth.

Assembly and Baking: 

To begin, place 2/3 portion of the brownie into the pan and smooth out with a spatula.

Secondly, top the brownie layer with the cream cheese and smooth it out with a spatula.

Adding the filling layer on top of the brownies.

Thirdly, add scoops of the filling on top of the cream cheese and use a spatula to smooth it out.

Adding the cherries onto the cheesecake filling.

Next, add scoops of the rest of the brownie batter and use a spatula to spread slightly.

Adding the cherries and chocolate layer.

To finish, bake the recipe for 30-35 minutes or until the middle is slightly jiggly. (Baking mine for 35 minutes was the perfect amount of time)

Finally, allow the recipe to reach room temperature before slicing. (It will be easier to cut if left in the fridge for at least 2-hours before serving)

How to Store Your Cherry Cheesecake Brownies?

You can store the recipe in an airtight container for the best storage method. This recipe can be stored in the fridge or freezer. Placing the recipe in the freezer will allow a longer shelf life.

Which baking pan can I use?

This recipe calls for a 9×13-inch baking pan. You can use a different size pan for a different thickness if desired. The bigger and shallower the pan the thinner the brownies will be.

Cherry Cheesecake Brownies

Ingredients
  

Brownies:

Cherry Cheesecake Filling:

  • 1 8 oz package cream cheese- softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/3 cup granulated sugar
  • ½ can cherry pie filling

Instructions

  • Line a 9×13 baking pan with parchment paper and lightly spray with non-stick spray and set aside. Preheat your oven to 350 degrees F.

Brownies:

  • In a large mixing bowl, whisk butter and sugar until combined and smooth. Pour in vanilla extract and whisk until just combined.
  • Mix in the eggs, one at a time, combining fully after each addition.
  • Add flour, cocoa powder, baking powder, and salt and whisk until it the batter starts to thicken then switch to a spatula to continue folding the dry ingredients until no dry spots remain.

Cherry Cheesecake Filling:

  • In a medium mixing bowl, use a hand mixer to combine cream cheese, sugar, egg, and vanilla until combined and smooth.

Assembly and Baking:

  • Pour about 2/3 of the brownie batter into the bottom of the prepared pan and use a spatula to smooth into an even layer.
  • Spread the cream cheese mixture over the top of the brownies and spread with a spatula.
  • Spoon dollops of cherry pie filling over the top of the cream cheese mixture and spread slightly.
  • Drop dollops of the remaining brownie batter on top of the pie filling. Spread slightly.
  • Bake for 30-35 minutes until the center of the brownies has a slight jiggle to them. I baked mine for exactly 35 minutes and they were perfect.
  • Let cool to room temperature before cutting. I advise refrigerating the brownies for 1-2 hours before serving to make them a little easier to cut.

    Delicious! I love the combo of chocolate, fudgy, creamy and sweet. I made it as an alternate desert for Thanksgiving along with apple and pumpkin pies.
