Chicken Waldorf Salad is my absolute favorite recipe to make for lunch. This recipe has the perfect amount of chicken, fruit, nuts, and delicious cream that that brings it all together.
We love making sweet and savory salads like Cajun Chicken Avocado Salad, Snickers Apple Salad, and Tortellini Pasta Salad just to name a few.

Chicken Waldorf Salad
Waldorf salad is a favorite of mine because it has a combo of creamy, savory and sweet. There’s so many textures and wonderful flavors going on. The best part about this chicken salad is that it takes just minutes to make! This is a great lunch idea to make ahead a grab quickly when your on-the-go.

This recipe is very forgiving on what you add in or keep out. We like it the way it is of course, but you can change it up according to your liking. You could add in chopped onions, replace cranberries with raisins, any kind of apples, more may – less mayo, different nuts, or whatever you prefer.
Tips:
- If you make this ahead of time, keep the pecans separate and top of stir them in at the last minute so they don’t go soggy.
- You can replace the pecans with any nuts. Walnuts or cashews would work well in this recipe.
- If you’re serving this at a picnic or potluck, make sure to keep it in the cooler or refrigerator until ready to serve since this contains dairy.
- You can use chicken that you have cooked or we like to use store bought rotisserie chicken to speed things up.
- Serve on croissants, whole wheat bread, or a bed of lettuce.
Chicken Waldorf Salad
Ingredients
- 2/3 cup mayonnaise light
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 2 cups diced cooked chicken
- 2 Gala apples cored & diced
- 2/3 cup sliced celery
- 1/2 cup chopped pecans (or walnuts)
- 1/2 cup red seedless grapes halved
- 1/3 cup dried cranberries
Instructions
- In a bowl, combine the mayonnaise, lemon juice, salt and pepper.
- Add the diced chicken, diced apples, grapes, dried cranberries and sliced celery. Toss to coat.
- Cover and chill. Sprinkle with chopped pecans just before serving.
