Cranberry Walnut Chicken Salad

This chicken salad recipe is delicious and contains Craisins, walnuts, chicken, mustard, vinegar, mayo, and more for a simple and quick recipe. You will fall in love with the texture of this recipe, it contains chewy and sweet cranberries, with a blend of crunchy walnuts. You can make almost anything into a salad. Ingredients

  • Mayo- This will give it a creamy texture.
  • Greek Yogurt- Sour cream may be used in place of yogurt. 
  • Lemon Juice- Lime juice can replace lemon juice if desired.
  • Mustard- You will need dijon mustard for this recipe.
  • Garlic- You will need to use garlic paste.
  • Salt- This will bring out the flavors.
  • Pepper- This ingredient will be used for taste.
  • Chicken- 2-3 cooked and shredded chicken breasts can replace the rotisserie chicken.
  • Craisins- This will add more texture to the recipe.
  • Walnuts- These will need to be chopped to prepare.
  • Celery- You will need a stalk of chopped celery.
  • Scallions- Slice the scallions into small pieces to add to the salad.
  • Lettuce- You will need green leaf lettuce for serving.

How to Make Cranberry Walnut Chicken Salad

First, add the mayo, Greek yogurt, lemon juice, mustard, garlic paste, salt, and pepper into a medium-sized bowl and combine.

Secondly, add in the shredded chicken Craisins walnuts, celery, and just half of the scallions.

How Long Does Rotisserie Chicken Salad Last?

This recipe will need to be stored in an airtight container. Next, you will want to replace the recipe in the fridge. The chicken salad will hold up for about 3-4 days.

Can You Freeze Chicken Salad with Mayo?

No, you cannot freeze the chicken salad with mayo. This ingredient does not freeze well. The texture of the salad will change completely.

Ingredients
  

  • ¾ cup mayo
  • ¼ cup greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon garlic paste
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 rotisserie chicken shredded
  • ¾ cup craisins
  • ½ cup chopped walnuts toasted
  • 1 celery stalk chopped
  • 3 Scallions diced
  • Green leaf lettuce for serving

Instructions
 

  • In a medium-sized bowl, whisk together mayo, Greek yogurt, lemon juice, mustard, garlic paste, salt, and pepper until combined.
  • Mix in the shredded chicken, craisins, walnuts, celery, and ½ of the scallions.
  • Portion chicken salad onto bread with lettuce and serve.

Notes

Lime juice can replace lemon juice if desired.
2-3 cooked and shredded chicken breasts can replace the rotisserie chicken.
The flavors will build the longer this salad chills in the refrigerator but is still delicious when consumed right after making.
Sour cream may be used in place of yogurt. 
For a less mayo-y flavor, you could do ½ and ½ mayo and yogurt or sour cream.
