Christmas Funfetti Cake

This Bundt cake recipe is so delicious! This cake is so fluffy, sweet, and tasty. This recipe will take about an hour to make but is super simple to prepare and follow along with. This cake is definitely worth the wait for a beautiful cake topped with creamy frosting.

If you haven’t tried baking a Bundt cake before, you really must try it! There are so many different designs of pans available! Believe me when I say once you start, you won’t stop making them! To get your creative juices flowing, I have a few cake recipes that I think you will enjoy! This Eggnog Bundt Cake is perfect for your holiday get-togethers. Full of flavor thanks to the eggnog, it will definitely be a hit.  If you are craving a chocolate cake, this heart-shaped Bundt cake will work perfectly for Valentine’s Day! Of course, if you are a fan of strawberries, then this dreamy cake is a must!

Ingredients

  • Milk- You will need whole milk for this recipe
  • Vanilla extract- Use pure vanilla for the best flavoring.
  • Butter- Use unsalted butter to control the amount of salt.
  • Sugar- Every great dessert uses sugar in the recipe.
  • Flour- Use all-purpose flour for the best results.
  • Baking powder- This will allow your cake to rise in the oven.
  • Egg whites- Be sure to have your eggs at room temperature.
  • Sprinkles- You will need the Christmas Funfetti sprinkles for this cake.
  • Cream cheese- Make sure to have softened or at room temperature.
  • Powdered sugar- This is the best sugar for homemade frosting.

How to Make Christmas Funfetti Cake

Set the oven to 350 degrees.

Take a paper towel with a dollop of shortening on it and rub it generously all over the inside of the Bundt pan.

*You must make sure to get every ceviche inside the pan covered with the shortening.

Then flour the pan generously. Tap the outside of the pan to knock out any of the excess flour.

Add the milk and vanilla into a medium-sized bowl and combine, then set aside.

Add the butter and sugar into a standing mixer and beat to combine until light and fluffy.

Whisk the flour and baking powder in a large bowl until combined.

Switching between wet and dry ingredients, slowly combine into the butter mixture and mix to combine on low to medium speed.

Pour the egg whites into a separate large bowl and beat using a hand mixer until stiff with peaks.

Fold into the batter to combine and add 2 C of sprinkles and mix again.

Add the batter into the prepared pan.

Place in the preheated oven for 45-60 minutes or until a tester comes out clean.

Let the cake cool for 15 minutes before transferring to a wire rack.

Cream Cheese Frosting Directions

Add the cream cheese and butter into a standing mixer and beat until combined and smooth.

Add in the vanilla and beat again.

Slowly add in the sugar and beat until smooth and combined.

Add the frosting evenly over the cake and finish off with sprinkles.

Serve and enjoy!

Can I Make This in a Regular Cake Pan?

For this Funfetti cake recipe, you will be using a Bundt pan. You can if you want, use a regular cake pan for this recipe. However, depending on the size of the pan, you will need to measure the ingredients to fit the pan.

What Icing Is Best with Funfetti?

This Funfetti recipe uses a delicious cream cheese frosting. This frosting is the best to use for this cake. The frosting is very simple to make and you only need a few ingredients to make a tasty homemade frosting.

Ingredients
  

Funfetti Cake Ingredients :

  • 1 C whole milk
  • 2 tsp pure vanilla extract
  • 1 C unsalted sweet cream butter softened
  • 2 C sugar
  • 3 C flour
  • 1 tbsp baking powder
  • 5 large egg whites
  • 2 C Christmas Funfetti Sprinkles
  • 1 tsp shortening

Cream Cheese frosting :

  • 4 oz cream cheese softened
  • ¼ C unsalted sweet cream butter softened
  • 1 tsp pure vanilla extract
  • 1 1/2 -2 C powdered sugar
  • ¾ C Christmas Funfetti Sprinkles

Instructions
 

Cake Directions:

  • Preheat oven to 350 degrees.
  • Prepare the Bundt pan by thoroughly greasing and flouring the pan.
  • In a medium mixing bowl, whisk together the milk and vanilla and set aside
  • Using a standing mixer, beat together the butter and sugar until light and fluffy
  • In a large mixing bowl, whisk together the flour and baking powder
  • Alternating between the milk and dry ingredients, gradually pour into the butter mixture and mix on low to medium speed until combined. .
  • Using another large mixing bowl and a hand mixer, beat the eggs until stiff peaks form.
  • Fold the egg whites into the cake batter
  • Mix in the 2 C of sprinkles
  • Pour the cake batter into the bundt pan
  • Bake in the oven for 45-60 minutes or until a toothpick comes out clean in the center
  • Allow to cool for 15 minutes before turning out onto a wire rack

Cream Cheese Frosting Directions

  • Using a standing mixer, beat together the cream cheese and butter until combined and smooth
  • Beat in the vanilla extract
  • Gradually beat in the powdered sugar until combined and smooth
  • Pour the frosting over the Bundt cake
  • Sprinkle the sprinkles on top
  • Enjoy!
