If your kids love dinosaurs, they will love this Dinosaur Quesadilla! We have made several different versions and this a fun way to get your kids to try spinach tortillas! My boys love them now prefer them over regular tortillas!

Dinosaur Quesadilla

My youngest loves dinosaurs and he loves it when I make “Dinodillas” as he calls them. We have made many of these and he always helps with a design or idea. Get your kids involved in making these and get creative with the ingredients you already have. They are super easy to make and worth the extra effort to see the smile on your dinosaur lovers face!

Dinosaur Quesadilla Ingredients

  • Spinach tortillas
  • Black beans
  • Rice
  • Shredded cheese
  • Sour cream
  • Guacamole chips

Directions:

  1. Choose your dinosaur design and cut your spinach tortillas in into the appropriate shape for the body using kitchen scissors.
  2. Do the same with the other tortilla using the other as a guide.
  3. Cut out the extra parts you’ll need with the scraps.
  4. Sprinkle black beans, cheese, and brown rice in between.
  5. Microwave for grill until cheese is melted.
  6. Decorate with black beans, sour cream and guacamole chips.
