Dr. Seuss Oh, The Places You'll Go Cupcakes

I was asked to make cupcakes for my 6 year old’s class Dr. Seuss Oh, the Places You’ll Go party at school today. We came up with these last night and they were so fun to make! My 6 year old helped make them and he did such a great job! We made a huge mess…but it was fun!:)

We never have trouble coming up with Dr. Seuss fun food ideas, but I was a little worried about what we could come up with for this book. I spotted these Rainbow Cupcakes from Sprinkle Bakes (she’s amazing) and thought they would be perfect to switch up the colors!

We also added a mini cupcake in the middle because all of that frosting would be a disaster with kids and I am sure his teachers would not be thrilled about the mess! We did however alter her frosting recipe which is great to work with these cupcakes! Ours are not near as fancy as hers, but this is what you get when you have little hands helping!:)

(makes 30 Cupcakes & 24 Mini Cupcakes)

2 Boxes Confetti Cake Mix (Pillsbury)
Buttercream Frosting (recipe below)
Cookie Sticks (broken in half)
Rainbow Cupcake Liners (Wilton…got them at Walmart)

Start out by preparing the cake mix according to directions. Line the muffin pans with rainbow stripped cupcake liners. Do not line the mini cupcakes..just use cooking spray. We made 30 regular sized cupcakes and 24 mini cupcakes using box cake mixes. We thought that the Confetti Cake Mix would give it that extra fun rainbow look. Make the frosting while cupcakes are baking.

Buttercream Frosting

3 1/2 Cups Butter (softened)
3 lbs. Powdered Sugar
1 Cup Milk or Cream (add more if needed)
2 tsp. Vanilla

Beat the softened butter with your mixer then add the powdered sugar in sections. Alter with the milk. Add the vanilla last and mix in. Add a little frosting to the tops of the mini cupcakes and place them upside down on top of the regular sized cupcakes like this….

Separate the other frosting equally into 5 separate bowls. We colored the different bowls of frosting with yellow, blue, orange, green & pink. Scoop the colored frostings into baggies and seal. Snip off the corner and frost around the mini cupcakes on top. We cut out our printables and taped them on cookie sticks that we broke in half. Push them in the top of the cupcakes. So easy and so much fun!

I am sure the 1st graders will have fun reading their cards and here they are ready to go to school!
