It’s hard to find a side dish that’s easier than this hasselback potatoes recipe. 4 ingredients and 10 minutes of prep time are all you need to make this impressive side dish.

  • Quick and easy. The prep time for these potatoes is just 10 minutes or so. All you need to do is slice, season, and pop them in the oven.
  • A “fancy” potato side dish. Hasselback potatoes are what I make when I want to elevate a dinner a bit more than just serving mashed potatoes or a baked potato. They just look so fancy.
  • Only 4 ingredients. All you need is potatoes, butter, salt, and pepper for this recipe. You can add herbs or cheese as well, which I mention below in the variations section, but honestly sometimes simple is better.

  • Butter – Since we’re adding salt, I like to use unsalted butter. If you have to use salted butter, you will likely want to reduce the amount of salt added.
  • Salt & black pepper

What Are The Best Potatoes To Use?

You can make hasselback potatoes with any type of potato – even baby potatoes! Just keep in mind that smaller potatoes will require a different cooking time. That said, I like to use russet baking potatoes. They’re the right size, slice easily, and are fairly sturdy. Yukon gold is another great option.

Recipe Variations

Here are a few ideas for customizing your hasselback potatoes.

  • Add some cheese. For a cheesy twist, sprinkle grated mozzarella or Gouda cheese over the potatoes during the final 10 minutes of baking.
  • Use herbs. Experiment with different herbs such as thyme or oregano to infuse the potatoes with additional flavors. Add them to the melted butter before brushing over the potatoes.
  • Try it with garlic butter. Instead of regular butter, try brushing the potatoes with garlic butter during baking. I like to add it during the last bit of baking time so that the garlic doesn’t burn.

How To Make Hasselback Potatoes

Though they look fancy, these potatoes only take a few minutes to prep. You can find the printable version of the instructions in the recipe card below.

  • Slice the potatoes. Place a potato on the cutting board with a chopstick on each side of the potato. Use a sharp knife to cut into thin slices about 1/8 inch apart, taking care to not cut all the way through. (The chopsticks will act as a guard to prevent this.) Repeat with each potato.
  • Season. Place the potatoes on a baking sheet. Brush with the melted butter, making sure the butter gets between the slices. Season with salt and pepper.
  • Bake. Bake for 45-60 minutes, until the potatoes are crispy on the outside and tender on the inside. Baste with more butter halfway through.

Tips for Success

Here are a few things to keep in mind when making this recipe.

  • Don’t slice all the way through. You want to cut most of the way through the potatoes to create the slices but not all the way or it will fall apart. Placing chopsticks along the long sides of the potatoes helps to work as a guard to prevent this.
  • Slice evenly. You can make your slices a bit thinner or thicker than mine. The main thing is to ensure that each size is roughly the same thickness to they cook evenly.
  • Adjust the baking time. The exact time it will take for your potatoes to bake really depends on the size of the potatoes and how thick you slice them. Smaller potatoes will take 45 minutes or less while larger potatoes can easily bake for an hour. The potatoes should be golden on the outside and tender on the inside.

Topping Ideas

I always like to add a garnish or two to my potatoes, similar to baked potatoes. Another option is to make loaded hasselback potatoes and add slices of cheese in between the slices before baking. Here are some topping ideas:

  • Chopped parsley
  • Grated parmesan cheese
  • Sour cream
  • Crumbled bacon
  • Chives (or any fresh herbs)

What To Serve Them With

These potatoes make a great side to so many dishes. A few of my favorite things to serve these with include pan seared steak, cream of mushroom pork chops, prime rib, and creamy Tuscan chicken.

Proper Storage

  • Fridge. If you have any leftover hasselback potatoes, allow them to cool completely before storing. Place them in an airtight container and refrigerate for up to 3 days.
  • Reheat. To reheat, place the potatoes on a baking sheet and warm them in an oven preheated to 350°F (175°C) for about 10-15 minutes, or until heated through. This helps maintain their crispiness.

Ingredients
  

  • 4 russet baking potatoes washed and dried
  • 1/2 cup unsalted butter melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat your oven to 425°F (220°C).
  • Place a potato on a cutting board. Position a chopstick on each side of the potato.
  • Using a sharp knife, slice the potato into thin, even slices about 1/8 inch apart. The chopsticks will act as a guide to stop your knife from cutting all the way through. Repeat with the remaining potatoes.
  • Place the sliced potatoes on a baking sheet. Brush them generously with melted butter, making sure to get some butter in between the slices. Sprinkle them with salt and black pepper.
  • Transfer the baking sheet to the preheated oven. Bake for 45 to 60 minutes, or until the potatoes are crispy on the outside and tender on the inside. Baste with more butter halfway through the baking time for extra flavor and crispiness.
  • Remove the potatoes from the oven and transfer them to a serving platter. Let them cool slightly before serving. Garnish as desired. Enjoy!
