What Is a Poke Cake?

A poke cake is one of the best cakes that you can make. The pudding in the center of the cake adds such a creamy and soft texture. The reason it is called a poke cake is that you poke holes into the finished cake to add in a filling.

Do I Refrigerate This Lemon Cake Recipe?

This Lemon cake will have to be placed in the fridge. The reason for this is because of the cream cheese. If cream cheese is left out it will spoil. So, be sure to place this in a sealed container and put it into the fridge.

This looks great but how is the heavy cream used in the frosting? Do you whip it before adding it to the cream cheese mixture?5 stars

I made this yesterday.  I whipped the cream in a separate bowl and folded it into the frosting. I added an extra tablespoon of lemon juice to the frosting because I thought it was too sweet.  I just beat it in after I had folded the whipped cream into the frosting,  This is a delicious, light and refreshing cake.  I’d highly recommend it.5 stars
