This Mexican Tater Tot Casserole is different spin on our popular Easy Tater Tot Casserole and is going to be a meal that even the fussiest kids will ask for seconds.

  • Frozen tater tots
  • Olive oil
  • Onion
  • Garlic
  • Lean ground beef
  • Taco seasoning
  • Water
  • Black beans
  • Frozen corn
  • Diced green chiles
  • Red enchilada sauce
  • Shredded cheddar or Mexican blend cheese

  • Avocado
  • Tomato

  • Salsa
  • Peppers

How to Make a Mexican Tater Tot Casserole

  • Preheat the oven to 400 degrees and spread the tater tots into a single layer on the baking sheet. Bake for 400 degrees for 15 minutes.

  • Meanwhile, add the olive oil into a large skillet. Heat it over medium heat and add the onions, sautéing until it is softened. This takes about 3 to 4 minutes.
  • Add the garlic and cook for 1 minute. Do not let the garlic brown.
  • Add the ground beef and cook the beef, stirring often until it is browned.

  • Drain the grease and add the taco sauce and water to the meat and stir it together.
  • Heat it for about 1 to 2 minutes and then remove it from the heat.

  • In a bowl, mix together the ground beef, beans, chiles, corn, enchiladas sauce and  2 cups of cheddar cheese.

  • Prepare a 9×13 glass casserole dish with nonstick spray. Add the filling to the dish and then arrange the tater tots over top in a single layer. Top the tater tots with 1 cup of cheese.
  • Turn the heat to 375F and bake the casserole uncovered for 30 minutes or until the cheese is melted and the casserole is bubbling around the edges.

  • Let the casserole cool slightly and then serve with the toppings of your choice.

Can This Tater Tot Casserole be a Freezer Meal?

If you want to make this tater tot casserole as a freezer meal, I recommend making it in a disposable pan. This is the easiest way to store the casserole in the freezer. You can also freeze a casserole leftovers of the casserole if you will not finish it all before it goes bad. In that case, you will want to store it in an airtight container or freezer bag.

Mexican Tater Tot Casserole

Ingredients
  

  • 32- ounce bag frozen tater tots
  • 1 tablespoon olive oil
  • 1 small onion peeled and diced
  • 2 cloves garlic peeled and minced
  • 1- pound lean ground beef
  • 1- ounce package taco seasoning
  • ¼ cup water
  • 15 ounce can black beans drained and rinsed
  • 12 ounces frozen corn no need to thaw
  • 4 ounce can diced green chiles
  • 10 ounce can red enchilada sauce
  • 3 cups shredded cheddar or Mexican blend cheese divided
  • Toppings: sour cream sliced avocado, chopped tomato, cilantro, salsa, peppers, chopped black olives, etc.

Instructions

  • Preheat oven to 400F.
  • Spread the tater tots out in a single layer on a large baking sheet. Bake at 400F for 15 minutes.
  • While the tater tots are baking, heat the olive oil in a large skillet over medium heat. Add the onions and sauté until softened, about 3-4 minutes. Add the garlic and sauté for 1 minute. Do not allow the garlic to brown.
  • Crumble the ground beef into the skillet and sauté, stirring often, until completely browned. Drain off excess fat. Add the taco seasoning and water to the meat and stir well. Simmer over medium heat for 1-2 minutes, then remove from the heat.
  • In a large mixing bowl, combine the ground beef mixture, black beans, corn, green chiles, and enchilada sauce. Add 2 cups of the shredded cheese and stir well.
  • Grease a 9×13 inch glass baking dish with non-stick cooking spray. Pour the enchilada filling mixture into the dish. Arrange the tater tots over the top in a single layer. Top the casserole with the remaining 1 cup of shredded cheese.
  • Reduce the oven heat to 375F. Bake the casserole uncovered for 30 minutes or until the cheese is melted and the casserole is bubbling around the edges.
  • Cool the casserole slightly, then serve with the toppings of your choice.
