The best thing about this fantastic chicken spaghetti recipe, besides the great taste, is that it is very easy to make!  As a budget-friendly meal, it also checks off one more mark on the “mom-approved” list.  Using pasta, chicken, veggies, and cheese, you can create a creamy cheese pasta dish that has everything your family wants in one bowl.
I love that this recipe features using pre-shredded chicken or my favorite go-to meal, a rotisserie chicken from the grocery deli.  I know my store marks them down at the end of the evening, and that means I can often pick up a whole chicken for just $2-$3!  If that is the case, I can shred up the chicken and add to this casserole and have a whole meal my family loves for under $10.

Can I Freeze this Spaghetti Casserole?

Freezer meals are a mom’s best friend.  That’s just one more reason I adore this chicken spaghetti recipe.  I know that I can make a double or triple batch and put it in a disposable pan to cover and put it in the freezer.  Then, when I am having an exceptionally busy week, I can pop it in the fridge overnight to thaw and make for dinner with zero prep!

To freeze this casserole, make as directed but do not put into the oven to bake.  Instead, wrap the entire pan in plastic wrap, and then cover the top with aluminum foil.  Add the date and recipe name with baking instructions to the top of the foil, and pop into the freezer.  Just make sure you use within 3 months for the best flavor.

Can I Use Canned Chicken in This Recipe?

If you want to make this recipe with canned chicken, you can. It will change the texture of the dish because the canned chicken is smaller pieces than a traditional rotisserie chicken. Using canned chicken is a way to make this recipe even more budget-friendly.

If you grab canned chicken for this recipe, make sure you drain it thoroughly before adding to the mixture.  You may also want to rinse it if you find that canned chicken is a bit too salty for your preferences.

  • Spaghetti
  • Rotisserie chicken
  • Monterey Jack Cheese
  • Parmesan cheese
  • Sour cream
  • Egg
  • Spinach
  • Garlic or garlic powder
  • Cream of chicken soup
  • Onion powder
  • French fried onion

How to Make Chicken Spaghetti

  1. For this recipe, you’ll begin by cooking your pasta according to package directions.  Once that is cooked, you will drain and set aside.
  2. Preheat your oven, then in a large bowl, you will combine the egg, sour cream, cream soup, cheeses, and seasonings together.
  3. Next, you will mix in the chicken spinach, and part of the onions to the mixture and combine well.
  4. Add the spaghetti to the chicken mixture and toss until combined and then pour into your baking dish.
  5. Cover with foil and bake for 30 minutes as directed.  At that point, you will remove the foil, top with cheese and fried onions, then return to the oven for a few minutes to melt the cheese and crisp the onions before serving.

This Chicken Spaghetti Recipe is a perfect addition to your weeknight menu. Loaded with spice, chicken, and creamy sauce, it is sure to please!

Ingredients

  • 12 oz spaghetti
  • 2 cups cooked rotisserie chicken
  • 1 cup Monterey Jack Cheese shredded
  • 1/2 cup parmesan cheese shredded
  • 1 cup sour cream
  • 1 egg beaten
  • 10 oz chopped spinach thawed
  • 3 cloves garlic minced or 1 tablespoon garlic powder
  • 20 oz cream of chicken soup
  • 1 teaspoon onion powder
  • 6 oz french fried onion divided

Instructions

  1. Pre-heat oven to 350' degrees.
  2. Cook the spaghetti according to package directions.
  3. Set to the side.
  4. While the pasta is cooking in a medium bowl beat the egg and add the sour cream, cream of chicken soup, Parmesan cheese, Monterrey Jack cheese. garlic and onion powder.
  5. Stir to combine.
  6. Add the chicken, spinach, half the fried onions to the sauce mixture.
  7. Stir to combine.
  8. Drain the spaghetti and to the chicken mixture.
  9. Toss to combine.
  10. Transfer to a 9x13 baking dish covered in non-stick baking spray.
  11. Spread evenly and cover with foil.
  12. Bake at 350º for 30 minutes
  13. Remove from the oven and remove foil.
  14. Top with remaining cheese and fried onions.
  15. Return to oven for another five minutes.
  16. Enjoy!
