This Sausage and Rice recipe is the ultimate cheesy, savory dinner that comes together in just one pan! It’s the perfect go-to meal when you’re short on time but still want something hearty and delicious. Plus, cleanup is a breeze, making it a lifesaver for busy nights when you just don’t feel like spending hours in the kitchen.

Smoked Sausage and Rice Recipe

This one pan dinner recipe has a lot of flavor and comes together in little time. The smoked sausage is browned and caramelized for a depth of flavor that adds a lot to the rice. Rotel tomatoes are a fantastic ingredient that I use often because they provide subtle heat and texture to any dish. I make this for a weeknight dinner at least once a week in our house, and even the kids ask for seconds! It’s one of my favorite recipes using smoked sausage.

Recipe Ingredients

This is a very simple recipe to put together. The smoked sausage is the main ingredient, and it’s very affordable. Rice is also another great component that you can make for an inexpensive and delicious dinner, too. I love making large batches and enjoying the leftovers!

  • Smoked sausage: Any variety of smoked sausage will work for this recipe. I use just an original variety.
  • Onion: I used a small yellow onion. White onion is also great, too.
  • Cream of chicken soup: This is going to be the creamy base for your sausage and rice. It adds a lot of flavor as well.
  • Water: I add water to help cook the rice. The liquid will be mostly absorbed once the dish is ready.
  • Rotel: I use original Rotel diced tomatoes with green chiles. They add flavor, texture, and a touch of spice.
  • Garlic: Fresh minced garlic adds aromatics and a sharp flavor that compliments the other ingredients.
  • Red pepper flakes: For a little more heat, I add red pepper flakes. You may omit this if you prefer.
  • Rice: Long grain white rice is classic and easy, but brown rice or wild rice work well in this sausage and rice recipe, too.
  • Cheddar cheese: I love the flavor of sharp shredded cheddar cheese with the smoked sausage.

How to Make Sausage and Rice

In 30 minutes, you will have a delicious one-pot meal to feed the family. Once all of the ingredients are added, you will let it simmer until it’s time to devour!

  • Brown the sausage and onion. Heat a large skillet over medium-high heat. Add the slices of smoked sausage and chopped onion. Sauté the sausage until slightly browned and the onions are soft.
  • Add soup and water. Pour in the cream of chicken soup and reuse the can for 2 cans of water. Stir until well combined.
  • Combine with remaining ingredients except cheese. Then add the Rotel, garlic, red pepper, and rice. Stir until thoroughly mixed.
  • Boil. Bring the sausage and rice mixture to a boil and then reduce the heat to medium-low.
  • Cover and simmer. Add a lid and let it simmer for 20-25 minutes, stirring occasionally. Once the rice is tender, it’s done.
  • Stir in some cheese. Add 1 cup of cheese and stir until melted.
  • Sprinkle extra cheese on top. Sprinkle the remaining shredded cheese on top, cover, and turn off the heat. 
  • Garnish and serve. Top with chopped fresh parsley once the cheese on top melts and enjoy!

Tips & Variations

Add veggies: Chopped broccoli, corn, or bell peppers to name a few options.

Sausage: Try this recipe with a kielbasa, turkey or andouille sausage.

Test the rice: The best way to check for doneness is to taste-test the rice. Once it is tender and no longer crunchy, dinner is ready.

Proper Storage

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 1-2 minutes or until warmed through for an easy dinner.

Ingredients
  

  • 14 ounces smoked sausage sliced
  • 1 small onion diced
  • 1 10.5 ounce can cream of chicken soup
  • 2 cans of water
  • 1 10 ounce can rotel tomatoes
  • 2 cloves garlic minced
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 cups rice
  • 8 ounces cheddar cheese shredded

Instructions

  • In a large skillet over medium high heat add your sausage and onion and cook until sausage is browned and onion is tender.
  • To the pan add your cream of chicken soup and fill the can up with water twice and add it to the pan.
  • Add your tomatoes, garlic, red pepper flakes and rice.
  • Bring up to a boil. Cover and reduce heat to low.
  • Cook for 20-25 minutes until the rice is tender.
  • Stir in 1 cup of the cheese.
  • Top with the remaining cheese and cover until the cheese is melted.
  • Garnish with parsley if desired. Serve!
