Easy Weeknight Sausage Pasta Recipe
During the school year, I like to keep dinnertime simple. Quick and easy meals are my go-to so we can spend more time together as a family, rather than in the kitchen cooking. I love to cook but I miss my kiddos when they are gone all day and I love to hear all about how school was. Dinner is the perfect time to sit together, eat delicious food, and enjoy each other’s company.
This creamy sausage pasta is a crowd-pleasing meal. My kids love pasta but often get tired of the same meals. It’s so tasty, cheesy, and easy to make. Anything that I can make in less than 30 minutes, I’m a fan of. Plus it’s a hearty and comforting meal. It hits the spot! What You’ll Need
These ingredients for creamy sausage pasta are easy to find and use. Plus, below you will find variation suggestions to make it more your own.
- Smoked Sausage: Any brand of smoked sausage, cut into slices. Pork or beef will work great.
- Onion: Finely diced – I use yellow or white.
- Chicken Broth
- Tomatoes with Green Chiles: You don’t need to drain these.
- Heavy Cream
- Campanelle Pasta
- Pepper Jack Cheese: Buy this pre-shredded or do it yourself.
- Scallions: Chopped for an optional garnish.
How to Make This Cheesy Pasta with Sausage
This is an easy one-pot meal that anyone can make. I love the creamy sauce with the browned sausage. It’s fast, too!
- Heat Skillet. Heat a large skillet over medium-high heat.
- Cook Sausage and Onion. Add the smoked sausage and onions. Brown lightly – for about 3-5 minutes.
- Add Broth and Pasta. Pour in chicken broth, then add tomatoes with chiles, heavy cream, and pasta.
- Boil and Cook. Bring to a boil and then reduce to a low simmer. Cover and cook for 12-15 minutes or until the cooked pasta is tender.
- Add Cheese. Stir in 1 ½ cups of the shredded pepper jack until melted.
- Season. Add salt and pepper to taste.
- Add Toppings. Top with remaining shredded cheese and scallions. Heat until the cheese on top melts.
- Serve. Add to bowls and enjoy.
Tips and Tricks
- Sausage: Use a spicy smoked sausage like andouille for more kick. Or you could switch out the smoked sausage for Italian Sausage to really cahange the flavors.
- Pasta: I enjoy Campanelle pasta for this recipe, but you can use fettuccine, rotini, or penne pasta. Use the cooking time on the package as a starting point and cook until tender.
- Cheese: Want less spice? Replace all of ½ of the pepper jack with regular Monterey jack cheese.
- Tomatoes: You can use hot tomatoes with green chiles if you prefer, I like to use mild or fire-roasted. Don’t want chiles? You can also substitute just canned diced tomatoes!
- Veggies: When cooking the smoked sausage and onions, you may also add chopped red peppers, mushrooms, asparagus, chopped spinach, broccoli or any other veggies you prefer.
How to Store and Reheat Leftovers
Store leftovers in an airtight container in the refrigerator. It will stay fresh for up to 3 days. I do not recommend freezing this meal. It will ruin the texture.
This meal is so easy to reheat on busy weeknights! Just pop a microwave-safe container or bowl into the microwave and heat on high for 1-2 minutes dor a quick dinner tonight! Top with even more shredded cheese and scallions if you like.

Creamy Sausage Pasta
Ingredients
- 1 pound smoked sausage sliced
- 1/2 small onion diced
- 2 cups chicken broth
- 10 ounce tomatoes with green chiles can
- 1/2 cup heavy cream
- 8 ounces campanelle pasta
- 2 cups pepper jack cheese shredded
- green onions garnish
Instructions
- In a large skillet over medium heat add the sausage and onion, brown lightly.
- To the pan add your chicken broth, tomatoes, heavy cream and pasta.
- Bring everything up to a boil, cover and reduce heat to low.
- Cook for 12-15 minutes until the pasta is tender.
- Stir in 1 ½ cups of the shredded pepper jack cheese.
- Top with the remaining cheese and a few sliced scallions.
- Once the cheese on top is melted, serve!
