If you haven’t heard of Strawberry Soda Cake, you are in for a treat. This simple to make cake mix and soda cake will be one of the moistest and easiest cakes you have ever made.
Easy Soda Cake
If you have never tasted a soda cake, you might not believe it. This cake is so simple. It is a strawberry cake mix and Sprite and that is it. This creates a fluffy and moist cake that everyone will love. Top the cake with powdered sugar, Cool Whip or store bought icing. You can also leave the cake as it, with no frosting, for a lighter dessert. You can also turn this cake into a poke cake by poking holes into the finished cake and pouring sweetened condensed milk into the holes, similar to this Chocolate Ganache Berry Poke Cake.
If you are looking for a more traditional strawberry cake, you will love Strawberry Bundt Cake.
What Does Strawberry Soda Cake Taste Like
Sprite has a citrusy taste and that complements the taste os the strawberry cake very well. The cake will taste like strawberry cake with a little bit of citrus. While this cake does have a sweetness, it is not overly sweet like some cakes can taste. Unlike some cake mix cakes, this cake is light and fluffy.
How to Store 2 Ingredients Cake
Once you have made this cake and it has cooled, you can wrap the cake pan with plastic wrap. You can also cover it with a lid. You want to make sure the cake is protected from the air, whether you keep it in the cake pan or you slice it and put it in an airtight container. This will keep the cake fresh and prevent it from going stale. This cake is best stored at room temperature to maintain the moist texture.

Can Cake Made with Soda Be Frozen
When you have more cake than you can eat before it goes bad, you can freeze it. I like to cut the cake into pieces before freezing it because then we can take a slice or 2 out at a time without having to thaw all of the cake. Wrap the cake well and put it in freezer bags before moving it to the freezer

Will this work with a gluten free cake. Mix?
Yes it will work with a GF mix.
Could this be cooked in a deeper cake pan or a loaf pan?
Can you use other flavored cake mix other than strawberry ? Thank you
Yes! Really any other flavor would work that pairs with lemon-lime.
I have made many different flavors of cake using this method. My husband is allergic to eggs so finding this hack as a godsend!
Would making this with strawberry soda be strawberry over load?
We don’t think it’s overload, but feel free to use Sprite instead if you prefer.
