Valentine Cookie Bars

These Peanut Butter Cookie Bars are so good! This Cookie Bar recipe only has a handful of ingredients and is super simple to make. And since this recipe only takes half an hour to make it’s a definite must try. These bars are a great gift for Valentine’s day or just to make for yourself, so be sure to keep this one handy!

Creating homemade gifts is always a great gift idea for the special people in your life. If you are looking for easy Valentines Day treats, I have a few that you might really enjoy. Such as my Valentine Popcorn, my Sheet Cake and least but not least my Red Velvet Cake.

Ingredients

  • Butter– Use unsalted butter to control the amount of salt in the recipe.
  • Peanut Butter-You will need to use creamy peanut butter for this recipe.
  • Egg- Use eggs that are at room temperature.
  • Brown Sugar- This will add a slight richness to your bars.
  • Vanilla- Use pure vanilla for the best flavoring.
  • Flour- Use all-purpose flour for the best results.
  • Valentines Day Toppings- You will need to have Valentine’s Day-themed M&M’s and Sprinkles.

How to Make Peanut Butter Cookie Bars

Set your oven to 350 degrees and use parchment paper to line a 9×9 inch baking pan.

Add the butter, peanut butter, sugar, vanilla, and egg into a large bowl and beat until smooth and combined.

Slowly add in the flour until a dough forms.

Using your hands, press the dough down into the prepared pan.

Add some M&M’s and sprinkles on top of the dough.

Put the pan into the preheated oven and bake for 24-26 minutes or until a tester placed in the middle comes out clean.

Let the bars cool thoroughly before slicing into bars.

Can I Add Nuts to These Cookie Bars?

The texture and flavor of these bars are so good. These cookie bars are perfect the way they are and always recommend giving the recipe a try first before adding anything. However, if you want a crunchier texture, you can add nuts.

Do I Need to Add Icing to These Dessert Bars?

These bars have a delicious peanut butter flavor with a blend of sprinkles and M&M’s mixed in. These bars taste great without any icing on top. But, if you want them to be a bit sweeter, you can add some icing on top.

Ingredients
  

  • ½ C unsalted butter softened
  • ½ C creamy peanut butter
  • 1 large egg
  • 1 C light brown sugar
  • 1 tbsp pure vanilla extract
  • 1 C flour
  • 1 C Valentines M&M’s
  • ¾ C Valentines Sprinkles

Instructions
 

  • Preheat oven to 350 degrees and line a 9x9 baking pan with parchment paper
  • Using a large bowl, beat together the butter, peanut butter, sugar, vanilla, and egg until combined and smooth
  • Gradually beat in the flour until combined and a soft dough forms
  • Fold in ¾ C of the M&M’s and ½ C of the sprinkles
  • Press the dough into the baking pan
  • Sprinkle the remaining M&M’s and sprinkles onto the top of the batter
  • Place into the oven and bake for 24-26 minutes or until a toothpick comes out clean
  • Allow cooling completely before cutting into bars
