This Crockpot Tortellini Soup is packed full of Italian sausage, cheese tortellini and veggies surrounded in a creamy tomato broth. A delicious hearty soup that’s loved by kids and adults!

This slow cooker tortellini soup is such a cozy, easy and delicious dinner! Letting half the ingredients cook for a few hours and then adding the cheese tortellini towards at the end to make this soup complete and perfect.
I love soup any time of year, and this recipe is one of my favorites. Ground Italian sausage adds bold flavor to the soup as well. Browning it with the chopped onions adds the perfect amount of caramelization before it goes into the slow cooker. I promise this is going to be your new favorite soup recipe during the winter.

Ingredients Needed
The ingredients in this tortellini soup are common and inexpensive that you may find at any local grocery store. I have many things on hand at all times, like garlic!
- Italian sausage: I use mild Italian sausage for this recipe to ensure it’s not too spicy for my kids. I think it would taste great with hot Italian sausage, too. I love the heat.
- Onion, Carrots, and Celery: This is called a mirepoix and also the “holy trinity” in most recipes because it’s a great base for a variety of dishes.
- Garlic: This adds a fragrant aroma and flavor and enhances the other ingredients. Freshly minced garlic is one of my favorite things to cook with.
- Tomatoes: I use a combination of crushed tomatoes and diced tomatoes. It makes a flavorful base with the broth and the diced tomatoes add texture. There’s no need to drain the diced tomatoes, I add the juice to the soup.
- Chicken broth: This will help cook the other components and make it a soup.
- Cheese tortellini: I use fresh cheese tortellini in this soup, but you may use any flavor you want. The spinach and cheese frozen tortellini are great, too.
- Heavy cream: This makes the soup nice and creamy.
- Spinach: I add this for color and texture. Plus, it’s good for you!
- Salt and pepper: I season this dish simply with a little salt and pepper. The other ingredients add a lot of depth of flavor.

How to Make Tortellini Soup in the Crockpot
Below are the steps needed to make this tasty sausage tortellini soup. Chop all of your veggies ahead of time so it’s super easy to add them to the slow cooker!
- Brown the sausage and onions. Heat a medium pan over medium-high heat. Add the ground sausage and chopped onions. Cook until the sausage is no longer pink and the onions are soft.
- Add the garlic. Stir in the garlic right before the sausage is fully cooked so it doesn’t burn. Cook for 1-2 minutes or until fragrant.


- Transfer to the slow cooker. Pour the mixture into the bottom of the crock pot.
- Add the remaining veggies and broth. Stir in the carrots, celery, crushed and diced tomatoes, and chicken broth.
- Cook. Cover and cook on high for 4 hours or on low for 7-7.5 hours.
- Add the rest of the ingredients. Stir in the heavy cream, tortellini, salt, pepper, and fresh spinach.


- Cook for the last half hour. Cook the soup for an additional 30 minutes on high.
- Garnish and serve. Top with extra black pepper and grated parmesan cheese.

Variations & Tips
- Cook the tortellini on high. Regardless of the setting you use to cook the soup, bump it to high heat when cooking the tortellini and spinach so they don’t overcook.
- Drain the fat. If you find there’s excess grease after browning the sausage, drain it before transferring it to the crock pot. If you’re not a fan of sausage, replace with ground beef.
- Try frozen ravioli. You may use frozen ravioli for this dish. However, I recommend that you place it in the refrigerator to thaw a bit before adding it to the slow cooker soup. This will prevent adding too much moisture.
- Add extra spice and seasonings. Experiment with the flavor profile by adding some Italian seasoning or crushed red pepper flakes.
- Serving. A Grilled Cheese, Cheesy Garlic Bread or Side Salad would go great with this.
Proper Storage
- Store leftovers in an airtight container for 3-4 days in the refrigerator. You may reheat the soup in the microwave or on the stovetop until warm.
- To freeze, place it in a freezer bag and store it flat in the freezer for up to 2 months. Skip adding the pasta and spinach until thawed and ready to heat. This will keep those ingredients from overcooking.

Crockpot Tortellini Soup
Ingredients
- 16 ounces Italian sausage
- 1/2 medium onion chopped
- 2 carrots sliced
- 2 celery sticks chopped
- 4 cloves garlic minced
- 28 ounces crushed tomatoes
- 14 ounces diced tomatoes with juice
- 4 cups chicken broth
- 2 (9 ounce) packages of cheese tortellini
- 3/4 cup heavy whipping cream
- 2 cups baby spinach
- 1/2 teaspoon salt and pepper
Instructions
- Add the sausage and onions to a medium sized pan, cook the sausage and onions until the sausage is fully cooked. Add in the garlic towards the end. (so it doesn’t burn) Add the sausage mixture to the 8 quart slow cooker.
- Add your chopped carrots and celery to the slow cooker. Add the crushed tomatoes, diced tomatoes with juice and chicken broth. Close the lid and cook for 4 hours and 30 minutes. (Set to High for 3-4 hours – set to Low for 7-8 hours). If you cook on low heat, change the setting to high when you add the tortellini in.
- 30 minutes before done add in the cheese tortellini, heavy whipping cream, spinach, salt and pepper and stir. Once done, serve and enjoy! Top with more pepper and parmesan. (Optional)
