Chicken Tortilla Soup Recipe

This Crock Pot Chicken Tortilla Soup recipe is a quick and easy meal you’ll enjoy making no matter what the weather is. This delicious tomato and chicken broth base blends perfectly with veggies, shredded chicken, black beans and sweet corn.

Ingredients You Will Need:

  • Chicken Breasts – thighs or breast can be used in this recipe.
  • Fajita Seasoning – We have a wonderful homemade fajita seasoning recipe here.
  • Onion – We use white onion and you can chop it fine or in chunks to your preference. I usually chop onion very fine for the Kids.
  • Tomato with Chilies – Rotel is a brand that we usually use.
  • Black Beans – You can use any beans. We prefer black beans.
  • Corn – canned or fresh can be used.
  • Bell Pepper – Red bell pepper is used in this recipe, but green will work just fine.
  • Chicken Broth – use your favorite brand.
  • Garlic – fresh is always best.
  • Bay Leaf – for flavor.
  • Cilantro – this is optional.
  • Tortilla Strips – we use corn tortillas. You can also break up tortilla chips.

  2. Cook for 6 hours then shred the chicken and cook an additional 20 minutes.

Tips for Success:

Chicken Tortilla Soup is sort of a base soup people love to top with lots of different options. In our house we keep the soup flavors very kid friendly then we make a topping bar for the rest of the family to customize. Here are some add-in ideas:

  • Spice it up! Adding a sprinkling of cayenne pepper or some chopped or sliced jalapenos will give you a definite punch of flavor.
  • Avocados: Either as slices, diced or guacamole avocados are a great creamy topping for the soup.
  • Dairy: Sour cream of course, but even a touch of heavy cream would be delicious. Don’t forget CHEESE!

You can of course leave the chicken out and swap the chicken broth for vegetable broth too. This makes a great vegetarian option. I’ve also grilled steak and sliced thinly or chopped it onto the soup so it stays tender.

Adding grains?

  • You can start with a small serving of rice in your bowl and pour the soup over it or you can add the rice into the slow cooker. Rice is a natural pairing for the recipe.
  • Quinoa: Quinoa would be a really great, healthy, addition to this dish. As with the rice adding in with the ingredients or seperately adding cooked quinoa would be a great option.

    1. Hi Julia. That’s a great idea. We have never had enough left overs to freeze but this recipe should freeze and thaw well.

    1. Hi Deb. Thank you for letting me know this. Those calculations were incorrect. I just fixed it.

This was so easy to throw together. I haven’t used my crock pot in years.
I served it to guests in my home and they ate it all and raved how good it was. I would recommend anyone that doesn’t cook alot to use this recipe. They will think you’re a great cook…haha

I love this recipe. I add a can of creamed corn to give the soup a bit more thickness. I also add a large spoonful of roasted chicken Better Than Bullion. I serve it over rice and garnish with chopped cilantro, tortilla strips, and lime. We are fans!

  3. Haven’t made yet, but prelogged in MFP and the nutrition info shows quite different? 196cal 3g fat, 10.3g carbs and 28.1g protein. I didn’t, however, log the tortilla strips. Servings 12.

I have made this twice now and it’s delicious. I found using 2 cans of tomato’s with chilies was too spicy for me so I just used 1 1/2 cans and this time I added more yellow, red and green peppers. Yummy

How big is a serving? The carbohydrates  and protein
Is on the list but no serving size.

I’ve made a very similar recipe and wow is it good! We used Ro-Tel mild  and  Less onion  (wusses!), and  Tortilla chips on top, with the option that people can add sour cream (no- or low-fat) and more crunchy tortilla chips later.

Have you put this recipe together and frozen it until needed?  Looking for freezer crock pot meal recipes. Just wondering if you’ve frozen the meal first. Thanks.

What kind or brand of fajita seasoning did you use or you could even make your own. Of course, it also depends on the quantity used that is in the package.

I have to try this recipe! I simply cannot pass up a bowl of chicken tortilla soup. Thanks for sharing.
