This simple casserole has long been a family favorite. It’s a perhaps unusual combination of flavors and ingredients with pineapple, cheddar cheese, and Ritz crackers, but they all work together so perfectly. I always receive so many compliments when someone tries my pineapple casserole for the first time!

- Sweet and savory. Pineapple casserole really nails the sweet and savory combo. The pineapple adds a bit of tart flavor, offset by the sugar, cheese, and crackers. It’s an unusual combination but it works so well.
- Great for holidays. This is one of my favorite sides for any holiday meal. It’s a little unexpected but it pairs so nicely with holiday entrees, especially pineapple glazed ham.

- Pineapple – I use both crushed pineapple and pineapple chunks in this casserole. Both should be drained but reserve 1/4 cup of juice from the pineapple chunks.
- Granulated sugar – Helps balance the acidity of the pineapple.
- All-purpose flour
- Cheddar cheese – Sharp cheddar works best, but you can use mild cheddar or a mix of cheddar and mozzarella for a milder flavor.
- Ritz crackers – Adds a crispy topping to the casserole.
- Unsalted butter – Substitute melted coconut oil or margarine for butter if needed.
How To Make Pineapple Casserole

- Prep. Preheat the oven to 350F. Grease the baking dish.
- Combine the ingredients. Add the crushed pineapple, pineapple chunks, and reserved juice to a bowl. Stir in the sugar and flour until well wcombined. Fold in the shredded cheese. Transfer to the baking dish in an even layer.
- Add the topping. Combine the Ritz cracker crumbs and butter. Evenly sprinkle over the pineapple mixture.
- Bake. Bake for 25-30 minutes. The top should be golden and the edges bubbling. Cool for 5 minutes then serve.
Tips & Variations
Here are a few general tips for this pineapple casserole and a few ways to customize it.
- Stir in some nuts. Add 1/2 cup of chopped pecans or walnuts to the topping for extra crunch.
- Make it less sweet. Reduce the sugar to 1/4 cup if you prefer a less sweet casserole.
- Drain the pineapple. Be sure to drain both the crushed pineapple and pineapple chunks well, reserving just 1/4 cup of juice. Otherwise the casserole will be too mushy.
- Use a 9×9 pan. This recipe is for a 9×9 pan. An 8×8 pan would probably work, with a slightly longer bake time, but a regular cake pan would be too large.
Serving Suggestions
While it’s not as traditional as green bean casserole or sweet potato casserole, this pineapple casserole makes a regular appearance on our holiday tables. It also pairs perfectly with any ham or turkey dinner throughout the year.
How To Store & Reheat Leftovers
- Fridge. Store leftover pineapple casserole in an airtight container in the refrigerator for up to 3 days.
- Reheat. Reheat in a 350°F (175°C) oven for 10-15 minutes or in the microwave in 30-second intervals until warmed through.

Ingredients
- 20 ounce can crushed pineapple drained
- 20 ounce can pineapple chunks drained (reserve 1/4 cup juice)
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1 cup shredded cheddar cheese
- 1 sleeve Ritz crackers crushed (about 1 cup)
- 1/4 cup unsalted butter melted
Instructions
- Set your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish or a dish of similar size.
- In a mixing bowl, combine the crushed pineapple, pineapple chunks, and 1/4 cup of the reserved juice.
- Stir in the sugar and flour until everything is well blended.
- Add the shredded cheddar cheese to the mixture and fold it in evenly.
- Transfer the pineapple mixture to the greased baking dish, spreading it out in an even layer.
- In a separate bowl, toss the crushed Ritz crackers with the melted butter until the crumbs are fully coated.
- Evenly sprinkle the buttery cracker crumbs over the pineapple mixture in the dish.
- Bake for 25-30 minutes, or until the top is golden and the edges are bubbling. Allow it to cool for about 5 minutes before serving. Enjoy!
