Dill Pickle Eggs Salad sandwiches on a plate

This dill pickle egg salad turns classic egg salad into a tangy, dill-infused lunch. It’s quick and easy to prepare, with every bite full of creamy dill flavor.

My dill pickled-obsessed family, who frequently request other recipes like dill pickle pasta salad and dill pickle dip, gobbles this salad right up. It’s a popular lunch, especially in the summer. I love it on lettuce wraps with a side of chips!

Why This Dill Pickle Egg Salad Is Such A Hit

  • Tangy dill flavor. Between chopped dill pickles, dill pickle juice, and fresh dill, every bite of this egg salad is bursting with tangy dill flavor. I love the combination of the pickles with the fresh dill.
  • 5 minute prep. It takes less than 5 minutes to prepare dill pickle egg salad, as long as the hard boiled eggs are already cooked and cool. It’s best chilled, so I do recommend making it ahead, like in the morning for lunch that afternoon.
  • Easy lunch idea. Dill pickle egg salad sandwiches are one of my favorite lunches. Quick and easy to assemble, super tasty, and filling. It’s easy to prep the salad on Sunday to enjoy throughout the week.

Key Ingredients

This recipe begins with basic egg salad ingredients and adds lots of dill flavor. Scroll down to the recipe card below for the exact measurements.

  • Hard boiled eggs – I’ve included lots of tips below for cooking perfect hard boiled eggs. You can also make hard boiled eggs in the oven.
  • Dill pickles – Any dill pickles you prefer, chopped into small pieces. For a different flavor, you can use other types of pickles too.
  • Scallions – I like to use scallions to add a light onion flavor to the salad. If you really love onions, feel free to use red onion.
  • Mayonnaise – The base of the creamy dressing.
  • Mustard – I used regular yellow mustard to add depth to the dressing. In my regular egg salad, I often use Dijon for an added kick. Feel free to try that here.
  • Spices – Paprika, black pepper, and salt.
  • Worcestershire sauce – Adds salty, savory flavor to the dressing.
  • Dill pickle juice – Thins the sauce just a bit and adds more tangy dill flavor throughout.
  • Fresh dill – Adding the fresh dill really makes the bright dill flavor pop in this salad.

How To Make Dill Pickle Egg Salad

Here’s an overview of the few steps required to make this salad. The printable instructions can be found in the recipe card below.

  • Prep the eggs. Roughly chop the eggs. Add them to a large bowl with the dill pickles and scallions.
  • Make the dressing. Whisk together the mayo, mustard, spices, Worcestershire sauce, dill pickle juice, and dill.
  • Combine. Add the dressing to the egg mixture. Gently stir to combine.
  • Chill. Cover and refrigerate for at least an hour before serving.

Tips for the Best Hard Boiled Eggs

Wondering how to boil the perfect hard boiled eggs for this egg salad? Here are a few tips!

  • Prepare them in advance. The eggs should be cool before starting the salad, so you’ll want to prepare them well in advance.
  • Avoid fresh eggs. Eggs that are approximately a week old are ideal for hard boiled eggs as the membrane of freshly laid eggs clings to the shell and makes them difficult to peel. Most eggs bought from the store will already be several days old, but keep this in mind if you have your own chickens or buy them from a local farmer.
  • How long do I need to boil the eggs? Hard boiled eggs typically need to cook for 7 to 9 minutes. For this recipe in particular, you want a completely firm center so I would aim for 9 minutes.
  • Place in cold water. As soon as the eggs are cooked, place them in a big bowl of ice water. This helps them cool immediately.
  • Crack and peel. After the eggs have cooled in the ice water, crack them on the egg of the counter then roll them. The shell should practically fall off.
  • Variations. Add in some veggies for extra crunch or diced avocados for a different texture. Replace the dill pickles with sweet relish if you are not a fan of dill.

Ways To Serve It

I like to serve dill pickle egg salad as a sandwich on thick sliced bread, like sourdough sandwich bread, or croissants. For a lighter option, it’s great on lettuce wraps.

And sometimes, for an afternoon snack, I’ll simply eat it with crackers for dipping.

Proper Storage

Store leftover dill pickle egg salad in an airtight container in the fridge. It’s best enjoyed within 3 days. Give it a good stir before serving.
