Animal Circus Cheesecake

My family is in love with this animal circus cheesecake. Like most kids, my little ones love animal crackers and this cheesecake recipe puts them inside! Plus, the cream whipped cream topping is delicious.

Cake ingredients

  • 1 box of Funfetti cake mix
  • 3 8 oz cream cheese, softened
  • 4 eggs
  • 1 tsp vanilla
  • 1 C sugar
  • 1 C low fat sour cream
  • 1 C crushed animal circus cookies
  • Pink food coloring

Whipping cream ingredients 

  • 1 C heavy whipping cream
  • 1/4 C powder sugar
  • 1 tsp vanilla
  • sprinkles
  • animal circus cookies
  • piping bag with star tip

Animal Circus Cheesecake

Cake directions

  1. Preheat oven to 350 degrees
  2. Spray your 9 inch springform pan with cooking spray and set aside
  3. Prepare the cake batter like shown on the back of the box
  4. Mix in the crushed animal cookies
  5. Pour the batter into the springform pan and bake for 35 minutes
  6. When cake is baked, pull out and let cool
  7. Using a standing mixer, add the cream cheese and sugar and mix on medium speed until combined
  8. Scrape the sides and mix again
  9. Add in one egg at a time and mix until combined after each egg
  10. Mix in the vanilla and sour cream
  11. Split the cheesecake into two bowls
  12. Add the pink food coloring into one bowl and mix until you get the desired shade you like
  13. Using 1 C scoop some of the white cheesecake into the springform pan
  14. Using 1 C scoop some of the pink into the middle of the white cheesecake
  15. Repeat steps until all cheesecake is gone
  16. Bake for 1 hour until cheesecake is set
  17. Place onto a wire rack and let cool
  18. Place into the fridge overnight to continue to cool

Topping directions

  1. In a standing mixer, combine the heavy whipping cream, powder sugar and vanilla
  2. Mix until stiff peaks form
  3. scoop some whipped cream into the piping bag
  4. Scoop the rest of the whipped cream into the top of the cheesecake and smooth it out
  5. Pipe around the edges whipped cream
  6. Sprinkle some confetti sprinkles around the top and place some animal cookies.

Ingredients
  

  • 1 box Funfetti cake mix
  • 24 oz cream cheese softened
  • 4 eggs
  • 1 tsp vanilla
  • 1 C sugar
  • 1 C low fat sour cream
  • 1 C crushed animal circus cookies
  • Pink food coloring

Whipping cream:

  • 1 C heavy whipping cream
  • 1/4 C powder sugar
  • 1 tsp vanilla
  • confetti sprinkles
  • animal circus cookies

Instructions

  • Preheat oven to 350 degrees
  • Spray springform pan with pam spray and set aside
  • Prepare the cake batter like shown on the back of the box
  • Mix in the crushed animal cookies
  • Pour the batter into the springform pan and bake for 35 minutes
