Blackberry Pie Bars with a Crumble Topping
These blackberry crumb bars are great Summer dessert to make for gatherings or an easy after school snack for the kids. The base is a simple shortbread dough made with butter, sugar and a few other ingredients. Half the dough is pressed into a pan then sugared blackberries are added on top. The remaining dough gets sprinkled on top for the crumb topping. It’s incredibly easy with impressive results!
These bars are wonderful by themselves, but extra delicious with a scoop of vanilla ice cream of top.

- Crust – flour, sugar, lemon zest, butter and eggs.
- Blackberry Filling – fresh blackberries, lemon juice, cornstarch and sugar.
How To Make Blackberry Crumble Bars
Making Blackberry Crumble Bars is so easy by simply mixing together the crumble topping and pressing half of it into a baking pan. Top that with sweetened berries and then sprinkle with the remaining crust.
- Preheat oven to 350 degrees.
- Combine the flour, sugar, lemon zest, butter and eggs until crumbly.
- Press half of the dough into the bottom of a baking dish.
- Combine the blackberries, lemon sugar, cornstarch and sugar and spread over the crust.
- Sprinkle the remaining dough over the blackberry filling.
- Bake for 35-40 minutes or until slightly golden brown.
Tips & Variations
- Blackberries – We like to use fresh blackberries, but Frozen blackberries can be used. Frozen berries need to be thawed and drained to keep your crumble from getting too soggy.
- Butter – cut the butter into cubes or you can grate the cold butter into the flour using a cheese grater!
- Variations – feel free to switch the blackberries to any other berries like blueberries, strawberries or raspberries.

Blackberry Crumble Bars
Ingredients
Crust and Topping:
- 3 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 large lemon Zest
- 1/2 cup unsalted butter cold and cut into cubes
- 3 large eggs slightly beaten
Blackberry Filling:
- 4 cups fresh blackberries cut in half
- 1 Tablespoon fresh squeezed lemon juice
- 1 Tablespoon cornstarch
- 3/4 cup sugar
Instructions
- Preheat oven to 350 degrees and line a 9×13 baking dish with parchment paper
- In a standing mixer, add the flour, sugar, and lemon zest and mix till combined.
- Add in the butter and mix.
- Using your fingers or a fork, break up the butter into smaller pieces and mix.
- Add in the eggs and mix until a crumbly dough comes together.
- Press half of the dough into the bottom of the baking dish and set aside.
- In a large mixing bowl, combine the blackberries, lemon sugar, cornstarch and sugar and mix until combined.
- Pour the blackberry mixture over the crust and even it out with a rubber spatula.
- Crumble the remaining dough over the blackberry filling.
- Bake in the preheated oven for 35-40 minutes or until the crumble appears slightly golden brown.
- Pull the baking dish out of the oven and set aside to cool completely.
- Cut and enjoy!
