Cherry Lemonade Bars

These Cherry Lemonade Bars are so good! This recipe will be ready to eat in no time with a great soft texture and a nice cherry-flavored glaze on top. This is a great recipe to try along with other types of fruit-flavored dessert bars such as Easy Peach Pie Bars or Blueberry Oatmeal Bars.

Ingredients

  • Butter- Use unsalted butter to control the amount of salt.
  • Sugar- Every great recipe uses sugar as an ingredient.
  • Eggs- Make sure to use these at room temperature.
  • Lemon Juice- Use fresh lemon juice for the best flavoring.
  • Salt- This will bring out the flavors in your recipe.
  • Lemon Zest- Be sure to zest your lemons before juicing them.
  • Flour- Use all-purpose flour for the best results.
  • Powdered Sugar- This sugar is perfect for homemade icing.
  • Cherry Juice- Be sure to get the Maraschino cherries.

How to Make Cherry Lemonade Bars

Set your oven to 350 degrees and use parchment paper to line an 8×8 inch baking dish.

Add the butter, sugar, eggs, lemon juice, and lemon zest into a large bowl and combine using a hand mixer.

Add the flour and salt into a medium bowl and whisk to combine.

Slowly combine both the dry and wet ingredients.

Add the batter into the prepared baking dish and bake for about 15-18 minutes or until the edges begin to brown.

Cool the bars for 15 minutes after taking them out of the oven.

Glaze

Add the powdered sugar, cherry juice, and lemon zest into a medium bowl and whisk to combine.

Evenly spread the glaze over the finished bars.

Before cutting and serving, allow the glaze to harden.

Can I Substitute Strawberry Instead of Cherry?

The cherry and lemon flavors blend so well together, but you can absolutely use strawberry to replace cherry. Both cherry and strawberry can go with the lemon bar flavor. Both will work well and come out tasting amazing.

Do I Need to Refrigerate Lemonade Bars?

There is nothing used in this recipe that will cause it to spoil too fast. You do not need to put these in the fridge. However, be sure to place these in an airtight container and place them at room temperature.

Ingredients
  

  • 1/2 C unsalted butter softened
  • 3/4 C sugar
  • 2 large eggs
  • 1 tbsp freshly squeezed lemon juice
  • 1/4 tsp kosher salt
  • 1 large lemon zested
  • 3/4 C flour
  • Glaze Ingredients
  • 1 C powdered sugar
  • 3-4 tbsp Maraschino cherry juice
  • 1 large lemon zested

Instructions
 

  • Preheat the oven to 350 degrees and line an 8x8 baking dish with parchment paper
  • Using a large bowl and hand mixer, beat together the butter, sugar, eggs, lemon juice, and lemon zest
  • Using a medium bowl, whisk together the flour and salt until combined
  • Gradually beat in the dry ingredients
  • Pour the batter into the baking dish and bake for 15-18 minutes or until the sides start to brown
  • Allow cooling for 15 minutes
  • Using a medium bowl, whisk together the powdered sugar, cherry juice, and lemon zest
  • Pour the glaze over the bars and spread evenly
  • Allow the glaze to harden before cutting into bars and enjoying
