A homemade cereal bar will last around one week when stored in an airtight container. However, if your family is like mine, it won’t last that long. If you want to make larger batches and see them last longer, you can store them in the refrigerator for up to 14 days. The main problem with making them and keeping for longer periods of time is that the cereal can get stale.
Ingredients for Chocolate Cereal Bars
- Butter
- Peanut butter
- Butterscotch chips
- Marshmallows
- Oat cereal
- Milk chocolate chips
- Dark chocolate chips
- Salt
How to Make Cereal Bars
Melt 1/2 cup butter in a medium saucepan over medium heat. Once the butter has melted, you will add the peanut butter and butterscotch chips and stir until melted.
Add the marshmallows and continue cooking while stirring constantly until they have melted and the mixture is blended together.
Place the oat cereal into a large bowl and then pour the liquid mixture over the top and mix well with a wooden spoon.
Press the mixture into a baking pan prepared and lined with parchment paper. Press it down with the back of your spoon to smooth, then set aside.
Now, you will make the topping by placing your chocolate chips and butter into a microwave-safe bowl and microwave in 20-second intervals, stirring to combine at each interval. The chocolate is ready when it has melted and is smooth.
As soon as the chocolate is ready, you will quickly pour it over the cereal mixture in the prepared pan and spread out with a rubber spatula.
Place in the refrigerator for 10-minutes or until the chocolate is beginning to set, then remove and sprinkle the top with the kosher salt.
Return to the refrigerator and allow the chocolate to fully set before cutting into squares to serve or store for later.
