Everyone loves this Chocolate Caramel Cereal Bars Recipe when I bring it to the table.  It’s so easy to make, and the combination of caramel and chocolate really satisfies cravings.  Crunchy cereal bits, a rich caramel marshmallow binder, and smooth chocolate topping make this my new favorite snack or dessert!

Chocolate Caramel Cereal Bars Recipe

Instead of buying processed granola bars in the grocery store, try your hand at making your own.  This recipe is super easy to make, and since it has caramel and chocolate, everyone will grab them.  I love adding these to lunch boxes, as a snack in my purse, or even to serve at birthday parties.

If you like caramel and chocolate together, then you’ll love Rolo stuffed salted caramel cookies.  They are salty and sweet, and a great choice for adding to your dessert menu. You might also love these butterscotch brownies with caramel icing.

Variations of this Cereal Bar Recipe

This recipe uses butterscotch chips, marshmallows, and oat cereal.  I love this combination, but you can easily make it a bit different and still just as delicious.  Mix and match flavors to create a cereal bar you love!

  • Pumpkin spice oat cereal with white chocolate topping
  • Apple cinnamon oat cereal with white chocolate topping
  • Use peanut butter chips instead of butterscotch chips
  • Add peppermint chips instead of butterscotch chips

How Long do Homemade Cereal Bars Last?

A homemade cereal bar will last around one week when stored in an airtight container.  However, if your family is like mine, it won’t last that long.  If you want to make larger batches and see them last longer, you can store them in the refrigerator for up to 14 days.  The main problem with making them and keeping for longer periods of time is that the cereal can get stale.

Ingredients for Chocolate Cereal Bars

  • Butter
  • Peanut butter
  • Butterscotch chips
  • Marshmallows
  • Oat cereal
  • Milk chocolate chips
  • Dark chocolate chips
  • Salt

Ingredients for homemade caramel chocolate cereal bars

How to Make Cereal Bars

Melt 1/2 cup butter in a medium saucepan over medium heat.  Once the butter has melted, you will add the peanut butter and butterscotch chips and stir until melted.

Add the marshmallows and continue cooking while stirring constantly until they have melted and the mixture is blended together.

Place the oat cereal into a large bowl and then pour the liquid mixture over the top and mix well with a wooden spoon.

Press the mixture into a baking pan prepared and lined with parchment paper.  Press it down with the back of your spoon to smooth, then set aside.

Now, you will make the topping by placing your chocolate chips and butter into a microwave-safe bowl and microwave in 20-second intervals, stirring to combine at each interval.  The chocolate is ready when it has melted and is smooth.

As soon as the chocolate is ready, you will quickly pour it over the cereal mixture in the prepared pan and spread out with a rubber spatula.

Place in the refrigerator for 10-minutes or until the chocolate is beginning to set, then remove and sprinkle the top with the kosher salt.

Return to the refrigerator and allow the chocolate to fully set before cutting into squares to serve or store for later.
