Even though this is more of a holiday mini cheesecake recipe, these are perfect for St. Patrick’s Day!

Ingredients

  • Graham cracker crumbs- The crumbs will be used for the base of the cheesecakes.
  • Sugar- Every great dessert uses sugar in the recipe.
  • Butter- Use unsalted butter to control the amount of salt in the recipe.
  • Cream cheese- Use softened or room temperature cream cheese.
  • Sour cream- This will cut the richness of the dessert and add moisture.
  • Vanilla extract- Use pure vanilla for the best flavoring.
  • Salt- The salt will bring out the flavors.
  • Eggs- Use room temperature eggs.
  • Cranberries– Use fresh cranberries for the best results.
  • Water- This will be added to the pan to make the sugared cranberries.
  • Heavy whipping cream- This will help with the consistency of the whipped topping.
  • Powdered sugar- This sugar is perfect for homemade frosting.

How to Make Cranberry Cheesecake Bites

Set your oven to 325 degrees and use cupcake liners to line a muffin tin.

Add all the ingredients into a medium bowl and combine.

Scoop the crust into the prepared pan using a tablespoon.

Press the crumbs into the pan using the flat-bottomed object.

Place it aside.

Filling

Add the sugar and cream cheese into a bowl and use a hand mixer to beat until combined.

Add in the sour cream, vanilla, and salt and beat again.

One at a time, add in the eggs and combine.

Add the mixture into the crust, about 2 1/2 scoops.

Place in the preheated oven and bake for 17-22 minutes or until the edges are firm and the cheesecakes become a really light brown.

Place the cheesecakes in the fridge to cool for a few hours.

Sugared Cranberries

Add 1 C of sugar and 1 C of water into a small pot and bring to a simmer, whisk mixture until the sugar has dissolved completely.

Gradually add in the cranberries and coat them in the sugar mixture.

Take the cranberries out of the pot using a slotted spoon and place them on a cookie sheet.

Let sit for 15 minutes.

Add 3/4 C of sugar in a bowl. Using a spoon, add a few cranberries to the bowl and toss to coat in sugar.

Take out of the sugar and repeat until all the cranberries are coated and place into a bowl.

Fresh Whipped Cream

Add all the ingredients into a medium bowl and beat until stiff peaks form.

Scoop the mixture into a piping bag and cut the tip-off.

Add dollops of the whipped cream on top of the cheesecakes.

Then, gently place a couple of sugared cranberries on top.

Ingredients
  

Graham Cracker Crust

  • ¾ C graham cracker crumbs
  • 1 ½ tbsp sugar
  • ¼ C unsalted butter melted

Cheesecake Filling

  • 2 - 8 oz cream cheese softened
  • ½ C sugar
  • ½ C sour cream
  • ¾ tsp pure vanilla extract
  • tsp kosher salt
  • 2 large eggs

Sugared Cranberries

  • 2 c fresh Cranberries
  • 1 C sugar
  • 1 C water
  • ¾ C sugar to roll cranberries in

Fresh Whipped Cream

Instructions

  • Directions
  • Preheat oven to 325 degrees and line a cupcake pan with cupcake liners
  • Using a medium bowl, combine all ingredients and mix until combined
  • Using a tablespoon, scoop the crust into the cupcake liners
  • Using a flat bottomed round cup, press the cup into the crust to make a firm crust
  • Set aside

Filling

  • Using a hand mixer, beat together the sugar and cream cheese until combined and smooth
  • Beat in the sour cream, vanilla, and salt until combined
  • Beat in 1 egg at a time until combined
  • Scoop 2 ½  tbsp of the cheesecake mixture into the crust
  • Bake in the oven for 17-22 minutes or until the edges are firm and a really light golden brown starts to form
  • Allow the cheesecakes to cool for a few hours in the fridge

Sugared Cranberries

  • Using a small pot, combine the 1 C sugar and 1 C water and bring to a slow simmer, whisking until the sugar has completely dissolved
  • Carefully pour the cranberries into the sugared water mixture and completely coat the cranberries
  • Using a slotted spoon, remove the cranberries from the water and place onto a cookie sheet
  • Allow sitting for 15 minutes
  • Pour the ¾ C of sugar into a bowl
  • Spoon a few of the cranberries at a time into the sugar
  • Toss the cranberries into the sugar completely coating them
  • Remove from the sugar and place into a bowl

Fresh Whipped Cream

  • Using a medium bowl, beat together all ingredients until stiff peaks form
  • Scoop into the piping bag
  • Pipe dollops on top of the cheesecakes
  • Carefully place a few of the sugared cranberries on top
  • Enjoy!
