  • 4 cups frozen pineapple chunks
  • 1 cup coconut milk unsweetened
  • 1/2 cup pineapple juice
  • 1/4 cup powder sugar
  • 1/2 teaspoon coconut extract
  • Pinch of salt


  • Prepare a piping bag and have serving dishes ready.
  • Place the frozen pineapple, coconut milk, pineapple juice, powder sugar, coconut extract and salt in the blender and blend until smooth and no lumps remain.
  • Immediately after blending, scoop the dole whip into a piping bag and pipe in a circular motion into the serving dishes. If desired, place the piped dole whips in the freezer for 15-20 minutes to allow it to set and hold its shape before serving.
