They are stuffed with seasoned ground beef, Mexican rice, nacho cheese, sour cream, chipotle sauce, and tortilla strips. Then the burrito is cooked in shredded cheese on a pan to give it a delicious cheesy crust on the outside.

What You’ll Need

- Ground beef – I like to use a lean 90/10 or 80/20 blend.
- Taco seasoning – To keep things authentic, I like to use the Taco Bell taco seasoning but any taco seasoning will work.
- Water
- Nacho cheese sauce – I used a can of Rico’s.
- Mexican rice – I like to use my homemade Mexican rice but you can also easily grab some at the store.
- Mayonnaise – The base of the creamy chipotle sauce.
- Chipotle sauce – From a can of chipotles in adobo to flavor the sauce.
- Sour cream
- Tortilla chips – Add a bit of crunchy texture inside the burritos.
- Tortillas – Be sure to use burrito size tortillas so you can fit everything inside.
- Shredded cheese – I used Colby Jack but a Mexican blend would be great too.
How To Make a Taco Bell Grilled Cheese Burrito at Home
Making this Taco Bell copycat recipe at home is quicker and easier than going through the drive-thru. You can find the printable version of the instructions in the recipe card below.
- Cook the beef. Brown the beef over medium heat. Drain any excess fat. Add the taco seasoning and water then cook for an additional 5 minutes until the sauce slightly thickens.
- Make the sauce. Combine the mayo and chipotle sauce.
- Assemble. In each tortilla, add the nacho cheese, a quarter of the beef, and 1/2 cup of rice. Top with the chipotle sauce, sour cream, and tortilla chips. Fold the burritos.
- Add the cheese. Add 1/4 cup of shredded cheese to a skillet over medium heat. Place the burrito seam-side down on the cheese. Cook until the cheese is browned and adhered to the burrito. Lift the burrito from the pan, add more cheese, and flip the burrito to cook that side too. Repeat with the other burritos.
Tips & Variations
Here are a few tips for making this Taco Bell grilled cheese burrito copycat.
- Don’t overstuff the tortillas. Be careful not to pile too much into the tortillas or you won’t be able to close them properly. You want to be able to fold them up without any opening or the filling will fall everywhere.
- Try a different protein. You can use any ground meat, such as ground turkey or ground chicken, in this recipe. Taco seasoned chicken or steak would also be super yummy.
- Add your favorite toppings. Feel free to customize the inside of these grilled cheese burritos with your favorite taco toppings, such as shredded cheese, salsa, and avocado. Just keep the first tip in mind and don’t overstuff them!
How To Store & Reheat Leftovers
- Fridge. Store leftover grilled cheese burritos in an airtight container in the fridge for up to 3 days.
- Reheat. You can reheat the burritos on the stovetop, taking care not to burn the cheese, or in the microwave.

Grilled Cheese Burrito (Taco Bell Copycat)
Ingredients
- 1 pound lean ground beef
- 1 envelope taco seasoning
- ¼ cup water
- 15 ounces can Rico’s nacho cheese sauce
- 2 cups prepared Mexican rice
- 2 Tablespoons mayonnaise
- 1 Tablespoon chipotle sauce
- Sour cream
- Tortilla Strips
- 4 burrito size tortillas
- 2 cups shredded Colby jack cheese
Instructions
- In a medium skillet over medium heat brown and drain your ground beef.
- To the drained beef add your taco seasoning and water and cook for about 5 minutes until the sauce slightly thickens.
- Mix the mayonnaise with the chipotle sauce.
- In each tortilla add nacho cheese, a quarter of the ground beef and ½ cup rice.
- Evenly divide the chipotle sauce amongst the 4 burritos.
- Top each one with some sour cream and a good amount of tortilla strips. Fold the burritos up.
- In a non stick skillet over medium heat add ¼ cup of shredded cheese.
- Place the burrito seam side down on the cheese in the pan. Cook until the cheese is browned and adhered to the burrito.
- Using a spatula lift the burrito out of the pan, sprinkle another ¼ cup of cheese in the pan and flip the burrito onto the cheese and cook that side.
- Repeat with all of the burritos. Enjoy!
