Spaghetti squash is a great way to cut back on the carbs and also a delicious way to get the kids to eat veggies. My boys have never been a fan of squash, but serving it this way gets them to not only eat it, but really enjoy it!

Not only is this a wonderful alternative to traditional pasta, but it’s also rich in nutrition! B vitamins, niacin, thiamin, riboflavin, folate, potassium, manganese, calcium, iron, phosphorus, and zinc, omega-3 and omega-6. Cooking spaghetti squash it in the oven creates a nice caramelized flavor on the edges that you can’t get with other cooking methods.

You start by cutting the squash in half…

Cutting Squash

Scoop out the seeds, rub a little olive oil and salt on the inside, and roast in the oven cut-side down. This keeps the squash from becoming mushy and leaves you with a nice and tender spaghetti squash. So easy and delicious!

Roasting Squash in the Oven

Once it’s roasted and cooled, use a fork to scrape the strands. Season it with a bit more salt and pepper and serve it as a side. We like to add a bit of parmesan cheese…so good! Our favorite way to serve this is with spaghetti sauce.

Tips:

  • The hardest part about preparing spaghetti squash is cutting the squash in half. You can always ask your grocer to cut it for you!
  • You can microwave this squash as well. Place the halves in a microwave safe dish filled with 1 inch of water. Microwave on high for 15 minutes. Add on 5 minutes at a time until done.

How to Cook Spaghetti Squash

Prep: 15 minutes
Cook: 40 minutes
Total: 55 minutes

Ingredients
  

  • 1 spaghetti squash
  • olive oil
  • salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees.
  • Slice the spaghetti squash in half lengthwise and scoop out the seeds.
  • Drizzle the inside of the squash with olive oil. Sprinkle with salt and pepper.
  • Place the spaghetti squash halves cut side down on the baking sheet and use a fork to poke holes.
  • Roast for 30 to 40 minutes or until lightly browned on the outside. Test by piercing through the skin with a fork. If it pierces easily, it's ready. The time will vary depending on the size of your squash.
  • Remove from the oven and flip the squash over cut side up. Use a fork to scrape and fluff the strands from the sides and bottom of the squash.
