This simple Vanilla Cheesecake Recipe is made in the Instant Pot. The rich vanilla flavor shines through in this simple to make cheesecake. If you are craving homemade cheesecake, it doesn’t get any easier than this Instant Pot Cheesecake.

Ingredients

  • Graham crackers – You can use store bought crumbs or you can use homemade crumbs
  • Unsalted butter- Always use unsalted butter to control the salt in the recipe
  • Cream cheese- Use room temperature cream cheese to prevent cracking
  • Sugar- You need sugar to make a cheesecake
  • Cornstarch- Cornstarch helps to give stability to the cheesecake
  • Eggs- Always use room temperature eggs when making cheesecake
  • Pure vanilla extract- Always use pure vanilla for the best flavor.
  • White chocolate chips- You want white chocolate chips for the best compatibility.
  • Heavy whipping cream- Use heavy cream when making the frosting
  • Powdered sugar- Powdered sugar is the best sugar for frosting

How to Make an Instant Pot Vanilla Cheesecake Recipe

Combine the crumbs and the melted butter together.

Press the crumbs together into a crust and press it up the sides of the springform pans.

Place the pan in the freezer while making the batter.

To make the batter, combine the sugar and cornstarch together in a bowl.

In another bowl, beat together the cream cheese and add the sugar mixture. Beat it until it is smooth.

Add in one egg at a time until it is completely combined.

Then add in the vanilla.

Pour the cheesecake batter into the crust and cover it with foil.

Pour a cup of water in the Instant Pot and then place the trivet inside.

Place the springform pan in the Instant Pot and place the lid on top making sure it is on sealing.

Set the pressure cooker to 40 minutes and allow a 20 minute natural release.

Remove the lid and use a paper towel to remove the condensation.

Remove the pan and allow to cool completely.
Then move the pan to the refrigerator overnight.

The next day melt the white chocolate chips in the microwave.

Beat in the heavy cream until it starts to form soft peaks.

Beat the sugar in and beat until it forms stiff peaks.

In another bowl, beat the cream cheese until it is smooth and then add it to the melted chocolate.

Make the whipped cream and scoop half of it into a piping bag.

Fold in the other half of the whipped cream and spread mixture over the cheesecake.

Refrigerate the cheesecake for 4 hours.

Can I Use Vanilla Powder Instead of Vanilla Extract?

You can use vanilla powder instead of vanilla extract. You will need to know the right conversion to replace the extract.

Does This Cheesecake Have Sour Cream?

This cheesecake does not have sour cream in it. I wanted to keep the vanilla flavor strong and the sour cream would slightly compete with the flavor.

Ingredients
  

Crust ingredients

  • 2 C crushed graham cracker crumbs
  • ¼ C unsalted butter melted

vanilla cheesecake ingredients

  • 2 - 8 oz cream cheese softened
  • ½ C sugar
  • 1 TBSP Cornstarch
  • 2 large eggs
  • 2 tsp pure vanilla bean extract

White chocolate Mousse

Whipped cream

  • ½ C heavy whipping cream
  • ¼ C powdered sugar
  • 1 large piping fitted with star tip

Instructions

  • Line the bottom of a 6inch springform pan with parchment paper and
  • spray the sides with pam baking spray
  • Using a large bowl mix the melted butter and the crushed oreos
  • Press the crust into the springform pan
  • Place into the freezer while you make the cheesecake mixture

  • In a small bowl, whisk together the sugar and cornstarch until combined
  • In a large bowl using a hand mixer, beat together the cream cheese and
  • sugar mixture until combined and smooth
  • Beat in the eggs 1 at a time until combined
  • Beat in the vanilla bean extract
  • Pour cheesecake mixture into the crust
  • Cover with foil
  • Fill the instant pot with 1 cup of water
  • Place a trivet inside
  • Place the springform pan onto the trivet
  • Close the lid and set to sealing
  • Bake on manual setting high pressure for 40 minutes. Once timer goes
  • off allow to natural release for 20 minutes
  • Remove the lid and use a paper towel to dap onto the foil to remove condensation
  • Carefully remove from the pot and place onto a wire rack and allow to
  • cool completely
  • Place into the fridge overnight

White chocolate Mousse Directions

  • Melt the white chocolate chips in the microwave for 30 seconds or
  • until melted. Stir inbetween each 30 seconds
  • Using a hand mixer, beat the heavy whipping cream until soft peaks form.
  • Beat in the sugar and continue to beat until stiff peaks form, set aside
  • Using another bowl, beat the cream cheese until smooth
  • Beat in the melted chocolate until combined
  • Fold in the whipped cream into the cream cheese chocolate mixture until combined
  • Spread evenly onto the cold cheesecake and place into the fridge for 4 hours

Whipped cream Directions

  • Using a hand mixer, beat together the heavy whipping cream and
  • powdered sugar until stiff peaks form
  • Scoop half into the piping bag
  • Spread evenly the whipped cream
  • Pipe dollops along the edge
  • Cut and serve!
