Neapolitan Cupcakes Recipe

I love these cupcakes. They are just fun. Just like the classic party ice cream, this cupcake is based on Neopolitan flavors of chocolate, vanilla, and strawberry. The homemade frosting puts the finishing touches on the cupcake.

Ingredients

  • Cocoa powder- Cocoa powdered is used to give the cupcakes and frosting a chocolate flavor.
  • Baking soda- Baking soda helps the cupcakes to rise
  • Water- You will want the water to be boiling
  • Unsalted butter- Always use unsalted butter. It helps to control the salt in the recipe
  • Canola oil- Vegetable oil can be used too.
  • Sugar- You can’t have cupcakes without sugar
  • Pure vanilla extract- Always use pure vanilla for the best flavor
  • Kosher salt- Salt brings out the flavor in baked goods.
  • Egg – The eggs should be room temp
  • Heavy whipping cream Heavy whipping cream is used in the cupcakes and in the frosting
  • Flour- You want to use cake flour for these cupcakes
  • Baking powder- Baking powder is needed to make the cupcakes rise.
  • Whole milk- You can also use 2% milk.
  • Strawberry extract- This gives a strawberry taste for the Neopolitan
  • Pink food coloring- Pink is used to represent strawberries.
  • Powdered sugar- Powdered sugar is the best sugar for frosting
  • Chocolate extract- Chocolate extract gives a big punch of chocolate flavor.
  • Pink sprinkles- Pink sprinkles to top the cupcakes
  • Chocolate ice cream cone – The cones will be broken into large pieces
  • Maraschino cherries- Just like a sundae, top these cupcakes with cherries.

      How to Make Neopolitan Cupcakes

Add the cocoa powder and baking soda to a heat safe bowl.

Pour the boiling water into the bowl, and mix it together until the bubbling stops.

Allow it to cool for 5 minutes.

Use a mixer to cream together the melted butter, oil, sugar, vanilla, and salt.

Mix in the whole egg and egg yolk, and then mix in the cocoa mixture until it is well combined.

Add in the flour slowly and scrape down the sides of the bowl.

Add 1/8 cup of the chocolate batter to the cupcake liner.

Make the Vanilla Cupcake Batter

Combine the cake flour, baking powder, and salt together in a bowl.

In a separate bowl cream the butter and sugar until it is fluffy.

In another small bowl, whisk together the milk, eggs and vanilla.

Add 1/3 of the flour to the mixing bowl, and mix until it is combined.

Add 1/2 of the milk mixture and mix until it is combined. Do this until all of the ingredients are added in.

Split the batter into 2 bowls and add strawberry extract to one of the bowls.

Gently add 1/8 cup to the top of the chocolate layer and then add 1/8 cup of the vanilla cake mix on top of the strawberry layer.

Bake the cupcakes in the oven for 21 minutes.

Let them cool completely.

Make the Frosting

Beat together the butter, cocoa powder, powdered sugar, heavy cream, chocolate, and vanilla extract until it is smooth.

Scoop the frosting into the piping bag.

Next, make the vanilla frosting by combining all of the ingredients except the strawberry extract and the pink coloring.

Separate the frosting into 2 bowls.

Add the strawberry extract and pink food coloring and mix it together well.

Scoop the pink frosting into a piping bag and the vanilla frosting into another piping bag,

Decorate the Cupcakes

Use the chocolate frosting to make a large circle around the cupcakes.

Do You Refrigerate Ice Cream Cupcakes?

These cupcakes are not actually made with ice cream. It is called Neapolitan because of the chocolate, vanilla, and strawberry like the Neapolitan ice cream. These cupcakes do not need to be stored in the refrigerator because it does not have a cream cheese frosting.

Ingredients
  

Chocolate cake

  • 1/3 Cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 Cup boiling water
  • 1/4 Cup unsalted butter melted
  • 2 1/2 Tbsp canola oil
  • 3/4 Cup + 2 Tbsp sugar
  • 3/4 tsp pure vanilla extract
  • 1/4 tsp kosher salt
  • 1 large egg room temp
  • 1 large egg yolk reserve white for white portion of cupcake
  • 1/4 Cup heavy whipping cream
  • 1 Cup flour

Vanilla Cupcake

Chocolate Frosting Ingredients:

  • 1 Cup unsalted butter softened
  • 1 Cup Hershey cocoa powder
  • 3 1/2 Cup powdered sugar
  • 1/4 Cup heavy whipping cream
  • 1 tsp pure vanilla extract
  • 1 tsp chocolate extract

Vanilla frosting Ingredients:

Instructions

For the chocolate cupcake:

  • Preheat oven to 350 degrees.
  • Line cupcake pan with cupcake liners and set aside
  • Using a large heat proof mixing bowl, whisk together cocoa powder and baking soda.
  • Carefully pour in boiling water and whisk until bubbling subsides and mixture is well blended, allow to cool for 5 minutes.
  • Using a standing mixer, cream together melted butter, Canola oil, sugar, vanilla and salt until well combined.
  • Mix in egg and egg yolk until combined.
  • Mix in cocoa mixture until combined
  • Gradually mix in flour until combined, while scraping down sides and bottom of bowl.
  • Spoon an even 1/8 cup of the chocolate cake mix into the cupcake liners and set aside

Vanilla cupcake:

  • Using a medium bowl, whisk together the cake flour, baking powder and salt until combined, set aside
  • Using a standing mixer, cream together the whip together butter and sugar until fluffy.
  • In separate mixing bowl whisk together milk, egg whites and vanilla extract until well blended.
  • Add 1/3 of the flour mixture to butter/sugar mixture, then mix until combined, then add 1/2 of the milk/egg mixture and mix on low speed until combined
  • Add another 1/3 of the flour mixture and mix until combined, then add remaining 1/2 of the milk/egg mixture and mix on low until combined
  • Add last 1/3 of the flour mixture and mix until well combined.
  • Split the batter into two bowls and add 1 tsp of the strawberry extract and a few drops of pink food coloring and mix until combined
  • Gently dollop a heaping 1/8 cup of the strawberry cake mix over chocolate layer
  • Gently dollop 1/8 C of the vanilla cake mix over the strawberry layer
  • Bake in the oven for 21 minutes
  • Allow to cool completely

Chocolate Frosting Directions:

  • Using a standing mixer, beat the butter, cocoa powder, powdered sugar, heavy whipping cream, chocolate and vanilla extract until combined and smooth on medium speed until creamy
  • If the frosting is to thin, mix in 1/4 C more of powdered sugar. Make sure to scrape the sides of the bowl!
  • Scoop into 1 piping bag fitted with a large star tip

Vanilla frosting Directions:

  • Using a standing mixer, beat the butter on medium speed until creamy
  • Mix in the powdered sugar, heavy whipping cream, and vanilla extract until combined and smooth
  • If the frosting is to thin, mix in 1/4 C more of powdered sugar
  • Split frosting into two bowls
  • Add a few drops of pink coloring and 3 tsp of strawberry extract into one bowl and mix until combined
  • Scoop the vanilla frosting into a piping bag fitted with a large star tip
  • Scoop the pink frosting into a piping bag fitted with a large star tip

Decorating :

  • Using the chocolate frosting, pipe a large circle onto the cupcake
  • Using the pink frosting, pipe a semi smaller circle on top of the chocolate frosting
  • Using the vanilla frosting pipe a even smaller circle on top of the pink frosting
  • Sprinkle pink sprinkles and top with a chocolate cone piece and cherry
