How to Make Strawberry Brownies
These strawberry cake mix brownies take about 10-15 minutes to prepare!
- Preheat the oven to 350 degrees and prepare an 8 inch square baking pan.
- Combine the cake mix, strawberries, lemon juice, and eggs into a large mixing bowl until smooth.
- Spread the batter into the prepared baking dish and bake for 18-20 minutes or until a toothpick in the center comes out clean. Let cool for about 10 minutes before removing the strawberry brownies from the pan.
- Make the glaze – add the powdered sugar and lemon juice into a small bowl and combining until smooth. Spoon the glaze over top of the brownies and let it drip down the sides.
- Cool on a wire rack and cut into squares.
Tips and Variations
Skip or Change the Glaze – we love these glaze on these brownies, but they are delicious without it as well. If you’re not a fan of lemon, you can mix a Tablespoon of strawberry jam and milk with the powdered sugar to make a strawberry glaze.
Mix ins – feel free to add in some white chocolate chips or dark chocolate chips to the strawberry brownie batter.

Ingredients
- 15.25 ounce strawberry cake mix
- 1/2 cup fresh strawberries chopped
- 1/3 cup lemon juice
- 2 large eggs
Lemon Glaze
- 1 cup powdered sugar
- 1 tablespoon lemon juice (add a few extra drops if needed for desired consistency)
Instructions
- Preheat the oven to 350 degrees.
- Line an 8” square baking dish with parchment paper and spray with cooking spray.
- In a large mixing bowl, combine the cake mix, strawberries, lemon juice, and eggs with a hand mixer or fork until smooth.
- Pour batter into the baking dish and bake for 18-20 minutes or until set (to test, insert a toothpick into the middle of the brownies until it comes out clean).
- Let brownies cool for 10 minutes before removing the parchment paper from the pan.

- Pour glaze over brownies and over the edges. Let cool completely on a cooling rack and cut into squares.
