Easy Strawberry Shortcake Recipe

One of the best parts of summer, in my opinion, is all of the fresh berries. Strawberries are one of my favorites and I love to use them in the kitchen. This easy Strawberry Shortcake recipe is one of my go-to’s.

This classic dessert is quick and easy to prepare and always loved by everyone. It’s light and sweet but not heavy, like many other desserts can be.

Quartered strawberries are mixed with sugar and vanilla to create the sugared strawberry filling which is layered with whipped cream and biscuits. While you could use store bought whipped cream (or Cool Whip) or store bought biscuits, I highly recommend using homemade biscuits and whipped cream. With a recipe this simple, those homemade touches truly make a difference!

This easy strawberry shortcake recipe is made with just 5 ingredients. See the recipe card below for measurements.

  • Strawberries – Fresh, perfectly ripe strawberries are key to making the best homemade strawberry shortcake!
  • Granulated sugar – Sweetens the strawberry mixture as well as the whipped cream.
  • Vanilla extract – Adds a bit of extra flavor to the strawberries and whipped cream.
  • Heavy whipping cream – The base of the whipped cream.
  • Biscuits – You can use store bought biscuits but I highly recommend my homemade biscuits!

How to Make Strawberry Shortcake

Making homemade strawberry shortcake is quick and easy. Just keep in mind you will want to prepare the strawberries in advance!

  • Make the sugared strawberries. Combine the quartered strawberries, sugar, and vanilla. Cover with plastic wrap and refrigerate for 30 minutes or more.
  • Make the whipped cream. Beat the heavy cream, sugar, and vanilla until soft peaks form. Refrigerate until assembling the shortcake.
  • Assemble the shortcake. To assemble your strawberry shortcake, slice a biscuit in half. Top with strawberries and whipped cream, then the other half of the biscuit. Finish with another layer of strawberries and whipped cream. Enjoy!

Recipe Tips & Variations

Here are a few helpful tips for making the best strawberry shortcake.

  • Use fresh, ripe strawberries. You definitely want ripe strawberries for this recipe. The bigger and juicier, the better!
  • Prepare the strawberries in advance. While you can enjoy the whipped cream immediately, the strawberries really need at least 30 minutes in the fridge. Longer is better!
  • Use fresh, homemade biscuitsThe absolute best strawberry shortcake is made with a biscuit that’s been baked the same day. Absolute perfection!

Can Homemade Strawberry Shortcake Be Made In Advance?

Strawberry shortcake should not be assembled in advance. However, you can prepare the different components in advance!

The sugared strawberries can be stored in an airtight container in the fridge for up to 48 hours, as can the whipped cream. The biscuits should be stored at room temperature in a ziploc bag.

Personally, I’ll assemble the strawberries a few hours in advance so we can have this easy dessert at least 2 nights in a row!

Ingredients
  

For the strawberries:

  • 6 Cups Quartered Strawberries
  • 1/4 Cup Granulated White Sugar
  • 1 Teaspoon Vanilla Extract

For the whipped cream:

  • 1 Cup Heavy Whipping Cream
  • 2 Tablespoons Granulated White Sugar
  • 1 Teaspoon Vanilla Extract

For the shortcake:

For the strawberries:

  • In a medium sized mixing bowl, stir together the quartered strawberries, 1/4 granulated sugar and 1 teaspoon of vanilla. Cover tightly with plastic wrap and store in the refrigerator for at least 30 minutes or up to 48 hours.

For the whipped cream:

  • In a large bowl, add the heavy cream, sugar and vanilla extract. Whip on high using a handheld electric mixer until soft peaks form. Cover and store in the refrigerator until ready to use.

To assemble:

  • Slice a biscuit in half and layer it with strawberries and whipped cream, place on the top and layer with more strawberries and whipped cream. Serve immediately
