Easter is all about the Easter Bunny. Well, if you have someone who loves unicorns, this is the perfect cake. Using a combination of the Easter Bunny and unicorns, this easy white cake Unicorn Easter Bunny is sure to delight.

Ingredients You Will Need

  • White cake mix – You can use your favorite white cake recipe as well. Using a cake mix saves time when you are in a hurry.
  • Egg
  • Water
  • Canola oil
  • Unsalted butter – I always recommend unsalted butter for baked goods. This lets you control the amount of sugar in the recipe.
  • Powdered sugar
  • Heavy whipping cream – Heavy cream is used when making frosting to thin the consistency. If the frosting is to thick you can a teaspoon at a time to the frosting to make it thinner.
  • Vanilla extract – If you want to make sure the frosting stay bright white, you will want to use colorless vanilla. Be careful to read the label to make sure it isn’t imitation vanilla.
  • Pink gel food coloring – Gel food coloring is better to use than the traditional liquid colors. It is easier to get the desired colors without thinning the frosting out.

How to Make an Easter Bunny Cake

Preheat the oven and prepare the cake pans.

Beat together the cake mix ingredients and divide the cake into the 3 pans.

Bake for 28 – 32 minutes or until the cake is done.

Allow the cake to cool completely.

While the cake is cooling, make the frosting.

Whip the frosting ingredients together until it forms stiff peaks.

Scoop out 2 cups of frosting and place it into a mixing bowl.

Add a few drops of the food coloring and mix well and then add it to a piping bag with a star tip.

Scoop 1/2 cup of the white frosting into a piping bag with a size 3 tip.

Build the cake

Cut the domes off of each cake and then place one layer onto the cake board.

Add 1 cup of frosting the cake and spread it out evenly.

Place the next layer on top and repeat with the frosting.

Place the last layer of cake on top and frost the entire cake.

Use the pink frosting bag to pipe dollops over the top of the cake.

Then use the white piping bag to pipe dots of white on top of the pink.

Place the ears and horn onto the top of the cake and then add the facial pieces.

Place the cake in the refrigerator to harden before serving.

What Can I Use Coconut For Bunny Fur?

If you want this bunny to look like it is furry, you can add coconut to the frosting. After smoothing the frosting add coconut flakes to the sides and top.

How do You Decorate an Easter Bunny Cake?

I am using a few specialty things from Wilton to create the unicorn horn, bunny ears, and face. If you can not find these things, there are a few things that you can do.

You can make the shapes of the horn and ears using fondant. The best way to use fondant is to buy it premade.

Another option is to make the shapes with clean cardboard and then cover it in the frosting.

If you can not find the facial features, you can always draw them on with cookie frosting colored black.

Equipment

  • 3 9inch round cake pans
  • 1 10inch round cake board
  • 1 medium piping bag with star tip
  • 1 medium piping bag with number 3 tip on it
  • 1 medium mixing bowl

Ingredients
  

  • 2 boxes boxes of white cake mix
  • 8 large Egg whites
  • 2 ½ C water
  • 1 C canola oil

Vanilla Frosting

  • 3 C unsalted butter softened
  • 6 C powdered sugar
  • 5 tbsp heavy whipping cream
  • 2 tsp vanilla extract
  • Pink gel food coloring

Decorating ingredients

  • Bunny Ears and Eyes kit
  • Unicorn Horn Cake Topper

Instructions
 

Cake directions

  • Preheat oven to 350 and spray cake pans with pam baking spray
  • Using a hand mixer and large bowl, beat all cake ingredients until combined and smooth
  • Divide the cake batter into the 3 cake pans
  • Place into the oven and back for 28-32 minutes or until a toothpick comes out clean
  • Allow to cool completely

Frosting directions

  • Using a standing mixer, beat all ingredients except for the colors until combined and smooth but stiff with peaks
  • Scoop 2 C of frosting into the medium mixing bowl
  • Mix in a few drops of pink gel food coloring into the bowl and mix until combined
  • Scoop into the piping bag with star tip
  • Scoop ½ C of white frosting into the piping bag with number 3 tip

Building the Cake directions :

  • Place one cake layer onto the cake board and cut the dome off the cake to make an even layer
  • Repeat step with other two layers
  • Scoop 1 C of white frosting onto the bottom layer and spread evenly
  • Place the second cake layer on top and spread evenly 1 more cup of frosting
  • Place the last layer of cake on top
  • Use the remaining white frosting and frost entire cake
  • Using the pink piping bag, pipe dollops all over the top of the cake
  • Using the white piping bag, pipe dots of white onto the pink
  • Place the ears and horn onto the top of the cake
  • Place the eyes and mouth onto the cake
  • Place into the fridge to harden the frosting before enjoying!
