These Chocolate Covered Graham Crackers are a sweet treat! These easy no bake cookies are coated with Baileys Irish cream mixed with chocolate and topped with a white chocolate drizzle.

Easy Chocolate Covered Graham Crackers

These chocolate covered graham crackers are a super fun and easy no-bake treat guaranteed to satisfy the sweet tooth. Made with Bailey’s, they’re a great adult-only treat for backyard BBQs and game day or any other occassion.

That said, you can absolutely make these without the Bailey’s if you’d like to keep them kid-friendly. You can also switch them up by up using different flavors of chocolate or graham crackers and have fun decorating them.

Why You’ll Love This Graham Cracker Dessert

Here are a few reasons why we love these chocolate covered graham crackers so much.

  • No baking required. Just melt the chocolate, dip the graham crackers, and let the chocolate harden. All you need is a microwave!
  • Easy to customize. As noted above, you can customize these by swapping out the flavors of chocolate used or using flavored graham crackers.
  • Fun to decorate. You can absolutely leave these as basic graham crackers dipped in chocolate but I think half the fun is decorating them! I used a white chocolate drizzle but you can find other ideas below as well.

  • Bailey’s Irish Cream: This adds a nice flavor, but you can opt-out if you prefer or want to make this a family-friendly treat.
  • Chocolate: I use a combination of chocolate almond bark and white chocolate almond bark for a drizzle.
  • Graham Crackers: You will need these broken in half for the recommended serving. The size of graham cracker squares makes for the best portion size. If you want them even smaller, just break the square in half.

How To Make Chocolate Covered Graham Crackers

Here’s an overview of how to make these chocolate covered graham crackers. See the recipe card for more detailed instructions.

  • Melt the chocolate. Add 2 squares of the almond bark into a heat-safe bowl and melt until smooth. Pour in the Irish cream and combine until it forms a thick pudding-like texture.

  • Prepare the graham crackers. Spread the chocolate mixture onto the crackers using a metal spatula, then arrange it onto a cookie sheet lined with parchment paper. Allow them to set for 20 minutes.
  • Dip the crackers. In a heat-safe bowl, add a few squares of the bark and melt until smooth and creamy. Coat the crackers in the chocolate and arrange them back onto the sheet. Allow them to set for an additional 30 minutes.

  • Prepare the drizzle. Melt the white almond bark in the microwave until smooth. Pour into a small bag and cut the corner to make a piping bag. Drizzle on top of the prepared crackers and let it set for another 20 minutes until set. Once hardened, serve, and enjoy!

Decorating Ideas

As you can see in the photos, I decorated my chocolate covered graham crackers with a drizzle of white chocolate. But there are so many other options! Here are a few ideas:

  • Drizzle with caramel
  • Drizzle with dark chocolate instead of white chocolate
  • Add food coloring to the white chocolate for a festive twist
  • Sprinkle with crushed nuts or Rice Krispies
  • Top with nonpareils or sprinkles

Tips & Variations

Here are a few things to keep in mind when making this no bake treat.

  • Use quality chocolate. The better the chocolate used, the better these will taste! I recommend using almond bark melting chocolate instead of chocolate chips, as they don’t melt as easily.
  • It’s so easy to change up the flavor of these no-bake cookies. There are several flavors to choose from in stores – chocolate graham crackers, cinnamon sugar graham crackers, and honey graham crackers!
  • Work quickly. The chocolate will harden relatively quickly, so be sure to work at a steady pace. If you’re adding sprinkles or other toppings, be sure to do so before the chocolate hardens.

Proper Storage

Store your chocolate covered pretzels in a ziploc bag or airtight container at room temperature in a cool area. Note that the graham crackers will begin to soften after a day or so, so it’s best to enjoy these within 2 days.

Chocolate Covered Graham Crackers (with Baileys)

  • In a microwave-safe bowl, add about 2 squares of Chocolate Almond Bark, and melt until smooth.   Add Bailey’s Irish Cream, stir, and it will become like a thick pudding.
  • Using a metal Spatula, spread the mixture on the Graham Crackers, and place them on a Parchment Paper lined Cookie Sheet. Let the Crackers sit on the Cookie Sheet until the mixture sets, about 20 minutes.
  • Place a couple more squares of the Chocolate Almond Bark in the microwave, and melt until smooth and creamy.  Dip the Graham Crackers in the melted Chocolate, and place them back on the Parchment Paper.  Let the Chocolate set, or become firm for about 30 minutes.
  • Place a square of the White Chocolate Almond Bark in the microwave, and melt until smooth.  Place the melted White Chocolate in a small Ziploc bag, and snip just the end off of one corner.  Drizzle the White Chocolate across the Graham Crackers (See Photo) and allow another 20 minutes for the White Chocolate to set.  When the Chocolate has set/hardened on the Crackers, serve, and Enjoy!!!

Tried this today, and lets just say they didn’t turn out at all 🙁 My melted chocolate with the Bailey’s never got to a pudding stage, (wonder if whisking would of helped), even tried to freeze them, and nope, still a mess 🙁 I wont be gifting these as I had hoped, but no worries I will enjoy & eat em anyways.

  2. Hello, what can you use besides Bailey’s Irish Cream, I’m worry about the liquor content for the kiddos @ church.

    1. Hey Connie, you could make them without the Baileys or use a coffee syrup like Torani Irish Cream if you wanted to keep the flavor. Coffee creamer might be an option as well. Hope that helps!
