Made with basic ingredients, these Baked Cabbage Steaks are a wonderfully quick and easy vegetarian side dish (or entree). The caramelized crisp outside layers are a beautiful contrast to the lightly seasoned center.

When I’m stuck on what to make for dinner, this recipe is one of my go-to’s. Beyond the cabbage, all you need is pantry staples, it cooks up in 20 minutes, and it has the most incredible flavor. Even the non-cabbage-lovers are on board with this one!
Why You’ll Love This Cabbage Steaks Recipe
Here are a few reasons why I enjoy this cabbage recipe.
- Very basic ingredients. You need just cabbage, oil, salt, and pepper for this recipe. As long as you have cabbage, you can whip it up anytime.
- Quick and easy. The prep takes less than 5 minutes and then the oven takes care of the rest. You can serve these in just 25 minutes!
- Vegan/vegetarian dish. Cabbage steaks make a great vegetarian and vegan side dish – or you can make them the star of the show as the entree too.

What You’ll Need
Here’s an overview of what you’ll need for this recipe. Scroll down to the recipe card below for measurements.
- Cabbage – I like to remove the outside layer of dark leaves.
- Oil – Vegetable, canola, or any other neutral oil works.
- Salt and pepper – The only seasonings needed.
How to Make Baked Cabbage Steaks
This cabbage steaks recipe comes together in just 20 minutes. You can find the printable version of the instructions in the recipe card below.
- Slice the cabbage. Slice the cabbage into 1/2 inch thick rounds. Place them on the baking sheet in an even layer, brushing each side with oil.
- Season. Season both sides of the cabbage with salt and pepper.
- Bake. Bake for 17-20 minutes, until golden brown.
How To Cut Cabbage for Cabbage Steaks
Here’s the easiest way to cut the cabbage for this recipe:
- Remove outer leaves. Remove the darker loose leaves of cabbage on the outside.
- Cut the bottom. Cut off the end of the cabbage head, to create a flat surface.
- Slice. Slice the cabbage into 1/2 inch thick slices with a sharp knife.
Tips & Variations
Here are a few things to keep in mind when making your cabbage steaks.
- Cut the slices to even thickness. The size of the cabbage steaks will vary from the ends to the center so the widths will be different but as long as you cut the thickness the same, they’ll roast in the same amount of time.
- Add other seasoning. Feel free to customize your cabbage steaks by adding other seasonings like garlic powder and paprika.
- How do I know when these are done? The outside layers of the cabbage will be darkly caramelized and the middle will be soft and cooked through.
Ways To Serve Them
Here are a few suggestions of what to serve with your cabbage steaks.
- Sauce – We enjoyed our cabbage steaks drizzled with yum yum sauce, but other sauces are delicious too. Some to try are warmed teriyaki sauce, hot sauce, soy sauce, balsamic vinaigrette, or other salad dressings.
- Meat – Cabbage steaks are a perfect accompaniment to a main dish like air fryer steak, BBQ chicken thighs, honey glazed salmon, and more.
- Vegetarian – For a hearty vegetarian meal, make the cabbage steak the main dish and add stir-fried veggies and tofu, mushrooms with a balsamic vinegar glaze, or any of your favorite vegetarian dishes.
How To Store Leftovers
- Fridge. Keep the leftover cabbage steaks in an airtight food storage container and refrigerate for up to three days.
- Reheat. The best way to reheat your cabbage is in the oven, just until heated through. The microwave will work in a pinch too.
