Bruschetta Recipe with Mozzarella

This is one of the best caprese bruschetta recipes I have ever made! Fresh mozzarella and basil are some of my favorite ingredients to work with, and they provide fantastic flavors for this bruschetta. There’s no real cooking involved beyond toasting the bread and melting the cheese, which is a super quick step.

Every time I make this for parties or special events, it’s a hit! There are never any leftovers. Even kids love it! I’m convinced the melty mozzarella draws them in, but can you blame them? I recommend using authentic extra virgin olive oil and balsamic glaze. It makes a huge difference in the flavor.

Ingredients Needed

  • Baguette: Fresh bread is always great if you can find it. Slice into 1 ½ – 2-inch pieces.
  • Fresh Mozzarella Cheese: You can find this in the deli section (or sometimes dairy) in your local grocery store. Slice thinly to fit on the baguette slices.
  • Tomatoes: Dice the tomatoes before adding the mixing bowl.
  • Basil: I like to use fresh basil for best results.
  • Shallots: Red onion can be used in a pinch.
  • Garlic
  • Olive Oil: Be sure to use extra virgin olive oil for the best flavor.
  • Salt & Pepper
  • Balsamic Glaze: You can find this with balsamic vinegar at your local grocery store. It’s a sweet reduction made with the vinegar.

Tips & Variations

  • I love ripe heirloom tomatoes for this caprese bruschetta, but you can use your favorite ripe tomato or cherry tomatoes instead. Canned diced tomatoes also work in a pinch. Just be sure to drain all the liquid before mixing them with the rest of the ingredients.
  • Brush the baguette slices with olive oil before toasting for an enhanced flavor.
  • The amount of balsamic glaze used on top can be based on personal preference. Add less or more depending on what you like.
  • Fresh basil leaves are best for this recipe, but you can substitute 1 tsp of dried basil if needed.
  • Substitute the baguette with your favorite greens and make a fresh caprese salad.
  • Bruschetta toppings: Add some avocado on top. Spread on basil pesto. Switch out the mozzarella for feta.

Can I Store Leftovers?

This Italian caprese bruschetta is best eaten on the day it is prepared. It doesn’t store in the fridge well, and the bread can become soggy. I also recommend never freezing tomatoes. It changes the texture and makes it difficult to eat.
