Cauliflower Bacon Cheese Casserole is a creamy, cheesy cauliflower with crumbled bacon on top is super easy and ready in 20 minutes.

If you like sneaking veggies into dinner recipes (especially for the picky kiddos) you’ll love this. Cauliflower is by far one of the easiest vegetables to work with and kids don’t seem to notice when there’s cheese!

This can be a side dish or a whole meal. If you’re doing any kind of low-carb diet you’ll love this. It’s just 5 minutes of prep and in and out of the oven in 20. Easy peasy!

Ingredients You’ll Need:

  • Frozen Riced Cauliflower. If you haven’t used this yet, it’s in the frozen aisle and it is literally cauliflower that has been shredded down.
  • Butter. Melted.
  • Garlic.
  • Chives. The dried kind you can find in the spice aisle.
  • Bacon. Freshly cooked and crumbled.
  • Cheese. Shredded parmesan and shredded cheddar.
  • Sour Cream.

How To Make Cauliflower Bacon Cheese Casserole

  1. Stir. Combine the frozen cauliflower, butter, chives, garlic and sour cream together. Then add in the seasonings and lastly, half the cheese.
  2. Prep. Butter the bottom of a baking dish and pour the casserole mixture in. Sprinkle the rest of the cheese and the bacon on top.
  3. Bake. Place in the oven and bake for 20 minutes until the cheese is bubbly. Let it cool and serve.

What To Serve With Cauliflower Casserole

If you’re using this recipe as a side dish, it goes great with Garlic Butter Steak Bites or Champagne Chicken or any of your other low carb main dishes.

For leftovers, keep in the fridge in an airtight container for 3-4 days. Reheat in the microwave.

Cauliflower Bacon Cheese Casserole

Ingredients
  

  • 1 large package of frozen Riced Cauliflower 20 – 24 ounces
  • 2 tablespoons butter melted
  • 1 teaspoon minced garlic
  • 2 tablespoons chives – dried
  • 1 teaspoon garlic salt
  • 1/2 teaspoon seasoned pepper
  • 1 pound bacon cooked and crumbled
  • 2 cups cheddar cheese shredded
  • 1 cup parmesan cheese shredded
  • 1 cup sour cream
  • parsley minced to top

Instructions

  • Pre-heat the oven to 400 degrees.
  • Combine the riced Cauliflower, butter, garlic, sour cream, chives, and stir well to blend.
  • Add the garlic salt, and seasoned pepper, and stir well.
  • Add half the shredded cheese, and mix well.
  • Pour into a 9 X 9 inch casserole dish – butter the bottom of the dish before adding the mixture.
  • Add the remainder of the shredded cheese, and top with crumbled bacon.
  • Bake for 20 minutes, until hot and bubbly.
  • Sprinkle with minced Parsley.
  • Serve, and Enjoy!
