Gingerbread Loaf with Cinnamon Frosting

makes 1 9×5 loaf

Ingredients

  • 2 2/3 C flour
  • 1 tsp baking soda
  • 3 tsp ground ginger
  • 3 tsp ground cinnamon
  • 1 tsp all spice
  • 1/4 tsp salt
  • 3/4 C unsalted sweet cream butter, softened
  • 1 C light brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla
  • 3/4 C molasses
  • 1 C hot water
  • 1 C powder sugar
  • 2 tbsp whole milk
  • 1 tsp ground cinnamon

Gingerbread Loaf with Cinnamon Frosting

Directions

  1. Preheat the oven to 350 degrees
  2. spray loaf pan with pam spray and set aside
  3. In a large mixing bowl, combine the flour, baking soda, ginger, cinnamon, all spice and salt
  4. Use a whisk and mix until combined
  5. In a standing mixer, beat the butter and brown sugar until combined
  6. Mix in the eggs and vanilla until combined
  7. In a medium bowl, combine the hot water and molasses and mix until combined.
  8. Pour molasses mix into the wet ingredients in the standing mixer and mix until combined
  9. gradually pour in the dry ingredients into the mixer and continue to mix until combined
  10. Pour batter into prepared loaf pan and bake in the oven for 60 minuets or until a toothpick comes out clean.
  11. Place onto a wire rack to cool to room temperature about 45 minuets
  12. In a medium bowl, combine the powder sugar, milk and tsp cinnamon and whisk until combined
  13. Take loaf out of loaf baking dish
  14. Pour then cinnamon glaze over the loaf and let harden for 10 minuets before cutting.
