What is a Hummingbird cake or bread made from?

Hummingbird cake is a banana-pineapple spice cake that is very common in the Southern United States. It is usually made with flour, sugar, oil, ripe banana, pineapple, cinnamon, pecans, eggs, and leavening agent. Hummingbird desserts are usually served with cream cheese frosting.

  • butter
  • sugar
  • brown sugar
  • eggs
  • baking soda
  • salt
  • flour
  • mashed bananas
  • pure vanilla extract
  • cinnamon
  • can crushed pineapple
  • sweetened shredded coconut
  • chopped pecans
  • powdered sugar
  • cream cheese

How To Make Hummingbird Bread:

Bread Directions:

  1. Preheat your oven to 350 degrees and grease your loaf pans with cooking spray
  2. In a large mixing bowl, combine the flour, baking soda, cinnamon and salt and whisk until combined
  3. Using a standing mixer, cream the butter and sugars until creamy and fluffy
  4. Mix in the eggs and vanilla
  5. Gradually mix in the dry ingredients and mix until combined. Batter will start to look really dry and crumbly
  6. Add in the pineapple, coconut and pecans and mix until combined
  7. Add in the mashed bananas
  8. Pour batter into loaf pans and bake for 35-40 minutes or until a toothpick or a knife comes out clean
  9. Let sit on a wire rack to cool completely

Icing Directions:

  1. Using a standing mixer, combine all ingredients except the pecans and mix until smooth and fluffy
  2. Using a rubber spatula, scoop some of the cream cheese frosting onto a cooled loaf and frost
  3. Sprinkle with some chopped pecans
  4. Enjoy!

How long will Hummingbird Bread Stay Fresh?

The Hummingbird Bread can be stored wrapped in plastic wrap at room temperature for about 4-5 days.

Can you freeze this Bread Recipe?

Yes. Before freezing, make sure the bread is completely cooled. After that, wrap in aluminum foil. Freeze for up to 3 month. Defrost before slicing. You can also freeze individual slices.

  • 3/4 C sugar
  • 1/4 C brown sugar packed
  • 2 large eggs
  • 2 1/2 C flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 C mashed bananas
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1 8 oz can crushed pineapple with juice
  • 1 C sweetened shredded coconut
  • 1/3 C chopped pecans

Icing:

  • 1/2 C unsalted sweet cream butter softened
  • 1 8 oz cream cheese softened
  • 1 C powder sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 3/4 C chopped pecans

So this sounds great. From the South, but never heard of this. Maybe I need to catch up on my heritage! wondering, does this fill two 8 x 4 inch pans? Thanks
