For Bread

  1. 1/2 C unsalted sweet cream butter, softened
  2. 3/4 C sugar
  3. 1/4 C brown sugar, packed
  4. 2 large eggs
  5. 1 tsp baking soda and salt
  6. 2 1/2 C flour
  7. 1 1/2 C mashed bananas
  8. 1 tsp pure vanilla extract and cinnamon
  9. 8oz can crushed pineapple
  10. 1 C sweetened shredded coconut
  11. 1/3 C chopped pecans

For Frosting

  • 1/2 C unsalted sweet cream butter, softened
  • 8 oz cream cheese, softened
  • 1 C powder sugar
  • 1 tsp vanilla extract and 1 tsp ground cinnamon
  • 3/4 C chopped pecans (optional)

How do you need to make Hummingbird Bread:

Bread Directions:

  1. Preheat your oven to 350 degrees and grease your loaf pans with cooking spray
  2. In a large mixing bowl, combine the flour, baking soda, cinnamon and salt and whisk until combined
  3. Using a standing mixer, cream the butter and sugars until creamy and fluffy
  4. Mix in the eggs and vanilla
  5. Gradually mix in the dry ingredients and mix until combined. Batter will start to look really dry and crumbly
  6. Add in the pineapple, coconut and pecans and mix until combined
  7. Add in the mashed bananas
  8. Pour batter into loaf pans and bake for 35-40 minutes or until a toothpick or a knife comes out clean
  9. Let sit on a wire rack to cool completely

Icing Directions:

  1. Using a standing mixer, combine all ingredients except the pecans and mix until smooth and fluffy
  2. Using a rubber spatula, scoop some of the cream cheese frosting onto a cooled loaf and frost
  3. Sprinkle with some chopped pecans
  4. Enjoy!
