Instant Pot Pound Cake

You will love how easy this Instant Pot Pound Cake is to make. One of my favorite things about baking in the Instant Pot is that it is quick, simple, and doesn’t heat up the house.

Ingredients

  • Unsalted butter- I always use unsalted butter in my baking. This lets me control the amount of salt in the recipe, even when I am adding salt later.
  • Granulated sugar- All desserts need sugar.
  • Eggs- You want to make sure you are using room temperature eggs.
  • Vanilla extract- Always use pure vanilla and not imitation vanilla for the best flavor.
  • Lemon juice- While this doesn’t add a lot of lemon flavor, it does help provide a great tasting batter.
  • All-purpose flour- You want to use all-purpose flour, but self-rising flour will work as well.
  • Baking soda- Baking soda is a must for baking a cake.
  • Baking powder- If you are using self-rising flour, you do not need to add baking powder.
  • Salt- Salt is essential for baked goods.
  • Buttermilk- If you do not have buttermilk, you can add one tablespoon of vinegar and then fill the measuring cup to 1 cup with milk. After it sits for a few minutes it will be similar to buttermilk.

How to Make Instant pot Cake

Cream together the butter, sugar, vanilla, lemon, and cream until it is light and fluffy.

Add one egg at a time and make sure it is mixed well between additions.

Sift together the flour, baking soda, baking powder, and salt.

Slowly add in the buttermilk and flour mixture, alternating between the two.

Pour the batter into a greased bundt pan and cover it with foil.

Add water to the instant pot and then place the trivet inside.

Place the cake pan onto the trivet and the set the pressure cook time 90 minutes.

Let the pressure release naturally and then remove the pound cake.

Allow the cake to cool before removing from the pan.

What Pan Should I Use For Cake in the Instant Pot?

When I make this Instant Pot Cake, I like to use a bundt cake. I like the way it bakes the cake. If you do not have a bundt cake that can fit into the Instant Pot, you can use a regular type of pan.

Does The Cake Get Too Soggy In the Instant Pot?

When you are making a cake in the Instant Pot, you want to use the trivet. You have to add water to the inner pot in order for it to build pressure, but you do not want your cake sitting in the water. By placing the trivet in the bottom of the pot, it raises the cake out of the water and keeps the cake from getting soggy.

  • In a stand mixer add the butter, sugar, vanilla, lemon, and cream until very light and fluffy.
  • Add in the eggs one at time, mixing well after each egg.
  • In a medium bowl sift together the flour, baking soda, baking powder, and salt.
  • Slowly add the buttermilk and flour mixture to the cream mixture.
  • Alternate between flour mixture and buttermilk.
  • Pour the batter into a greased bundt pan.
  • Cover with foil.
  • Add 2 cups water to Instant Pot insert and a trivet.
  • Place the pan in the Instant Pot to rest on the trivet.
  • Close the lid and turn the pressure valve.
  • Cook on manual for 90 minutes.
  • Let the pressure release naturally.
  • Remove the pound cake.
  • Allow to cool before removing from the pan.
  • Garnish with whip cream and fresh fruit.

    I got a question about Step 1 the last step it says add cream but in the ingredients there is no cream

    1. Instructions are telling you to cream the ingredients together (mix them) until blended. Not that there is cream in the recipe.
